Watermelon rind candies. - When you have leftover watermelon rinds, demeat and deskin, cut them into finger-size strips. - add 200g sugar (a little bit less than 1 cup), into 800g watermelon strips. Mix well. Cover the container. Keep in the fridge for at least 4 hours. Can do overnight. - There will be much liquid coming out from the rinds. Pour the liquid and the marinated rinds into a pan. - boil over high heat for 10 minutes, so that the rinds turn soft. - get the rinds out. Once they are not too hot to be handled, dry them up with kitchen towel. - air fry them at 170F for 2 hours. - once they are cooled down, you can optionally coat when with citric acid or cane sugar.

I have seen orange rinds, lemon/lime rinds, grapefruit rinds and pomelo rinds being candied, but never have I seen candied watermelon rinds, I gotta try some of that someday.
No grapefruit needs to be boiled up to 5 times to remove the bitterness then boiled in sugar water for 10 min. Strain then coat in sugar. Same for oranges and lemons
