    I made this today from scratch, following all the steps. It's a sensational recipe and well worth the time. Nice and spicy and full of flavour. The potatoes par boiled and then finished in the sauce are unbelievably good! Plus a portion enough for two in the freezer for mid week!

    Being Asian myself I have to say that this is an interesting blend of spices you have used here, I have never tasted a vindaloo in my life and I don't think that there is any such thing, but I believe you when you say it is in Goa, but I am going to try this out and will definitely leave a comment on it. One thing though, wouldn't it be better if you were to saute the chicken with ginger and garlic and once cooked take it out, and the go with the process?

    Just made this following a recommendation. It’s on its last simmer and it already smells and tastes out of this world
    Even better, next time I make it I have 90% of the ingredients in now 😊

    Coconut vinegar is available from Wing Yip Steve. I picked up a bottle on my last trip there with no idea what to use it for, it just looked interesting.
