Monte Cristo Sandwich recipe with Waffle

    Easy to make - hearty and delicious variation of a basic Monte Cristo sandwich using the Eggo Thick and Fluffy Waffles and Schwartz's Sliced Corned Beef Brisket with Swiss and Gouda cheese mix.
    SERVES 2
    2 Eggo Thick and Fluffy Waffles
    125 g Schwartz's Sliced Corned Beef Brisket (or any other deli meat of your choice)
    2 Slices of Swiss cheese
    2 Slices of Gouda cheese
    2 Eggs
    Splash of milk
    Seasoning (Paprika, Salt)
    2 Tbsp of Mayo
    1 tsp Yellow Mustard
    1 Tbsp Vegetable oil
    2 Tbsp of Butter
    PREPARATION:
    In a shallow bowl, whisk together the eggs, milk, salt and paprika, set aside.
    In a small bowl, mix together the mayo and mustard, set aside as well.
    Spread a thin layer of the mayo mixture (about 1 tsp) on both waffles, top one waffle with cheese (the more, the better, so it can hold the sandwich together), add the meat, add another waffle on top and set aside.
    Preheat a skillet over medium heat, add the butter and oil and allow the butter to melt and the mixture to get nice and hot.
    Dip the waffle sandwich carefully in the beaten egg mixture making sure both sides are well coated in the egg.
    Place the sandwich in the hot skillet and cook for 3 to 4 minutes on each side until the outside is golden brown colour and the cheese is fully melted!
