I made basically the same mayo and steak sauce last night with some chuck steaks last night, but I put just a dash of sriracha in it as well. Holy shit, I couldn't believe how good it was.
SAM THE COOKING GUY I don't think that you're a complete POS, so I made these tonight, and, OH MY GOD! - the flavors mingling in this amazing burger were INSANE, ...Mental!! You can pick out each flavor individually, and yet they blend and the balance is PERFECT. This was also the first time I used Kewpie mayo. This mayo and A1 sauce created the perfect flavor ambiance for this burger. I did one thing differently... I used pepper jack cheese in the middle of the patty, because, why not? We like PJ and it was delicious. Love you, Sam, thanks for the inspiration to cook and to try different things.
Love that idea, bacon and cheese embedded with the meat. One thing about BBQ, grilled etc. burgers is, too many folks over cook them. AND, for those who head out for takeout or burgers from a burger joint are getting the shaft. Why? They overcook the beef or "meat" depending on what they are selling you. Why is that? Could be the food inspection rules the various counties demand on food service locations. For decades In-N-Out Burger would prepare a rare or med-rare burger on request but in the last year or so, they won't do it anymore. Other big name burger places won't either but some of the private mom & pop burger places will cook them as you want it and that is where you get a real tasty burger. Well done hamburger is simply awful, it's tough, dry and no flavors so apparently they have to cover that up with "sauce". Medium rare fresh ground chuck/brisket or round is the best there is. "Ground Meat", "Ground Beef" or whatever they label it today is simply, scraps of all sorts of "beef" for $4 a pound. Ask your butcher, meat dept., etc. to grind up 10 lbs of chuck, brisket or round when it's on sale in 1 lb packages and you will be most impressed with the flavor. When Sam cut this burger in half and said "Perfect", this is exactly the right amount of cook time for the most flavor, even if it's "store bought beef". You won't believe it until you try it.

That Japanese mayo with the steak sauce sounds awesome, and may I say even creative. BUT WHAT?!?!? No Sriracha? I guess it doesn't fit in with the steakhouse theme, but I do like it. So, I'll need to find some packaged onion rings, as they're too much work otherwise. No In and Out's here in Colorado 😉🤣, so I'll need to figure out another solution for the rings. 👍🏻

You can literally eat pork raw and be fine. Poultry is the only meat you need to cook fully

Its one thing to under cook beef, but not bacon. Either fully cook or cook and cool bacon prior to making the patties.
