Quick and Easy Prawn Fried Rice

  • Why not make it a little easier for yourself when it comes to dinner time? Good and tasty food doesn’t have to be complicated.
    Being Asian, ‘rice is life’, 🍚💪🏽and I make at least 3 rice dishes a week. This prawn fried rice recipe is a firm favourite at our home. ❤️
    If you don’t like prawns you can substitute with chicken, beef, vegetables, tofu or maybe just with plain egg.
    Tip: A day old cold rice ( I usually keep mine in the freezer) is the best type to use. This holds better and doesn’t make your rice soggy.
    Ingredients for Prawn Egg Fried Rice
    3 cups of cold white rice (I use Jasmine rice)
    2 tbsp dark soy sauce or Maggie All Purpose Seasoning
    10 pcs large prawns
    2 large eggs lightly beaten
    1 onion finely chopped
    2 small garlic finely chopped
    ½ medium carrot finely chopped
    2 tablespoon Chinese white wine or dry white wine (optional)
    chopped spring onions
    oil (I use peanut oil)
    1 tsp sesame oil
    salt & pepper to taste
