I made these! And I’d say these are very good when they’re hot/freshly baked, not so much when they’ve been cooled for a while because they are too chewy/thick. I made another batch using glutinous rice flour (same ratio and everything else) and liked it much better. They still taste good after a few hours!

If you're dealing with a deflating donut issue, make sure you cook the flour and milk mixture fully! The dough is a choux pastry dough and when you add flour and heat, the starch in the flour gelatinizes. This is crucial for getting your donuts to rise, otherwise, it won't have enough structure when it expands in the oven. Stop mixing your dough when it forms a ball and leaves a slight film on the bottom of the pan. Also, the texture of the batter is CRUCIAL, so add your egg slowly and check that it is the right consistency (v-shape off the spatula and should have a shiny surface). Hope this helps! :)
Thanks for the detailed explanation. Could you tell me for how long I need to mix after I add a flour into the sauce pan? For puffs, it takes about 10-12 minutes to be mixed well.

My batter was extremely clumpy, I added two eggs and it didn't have the wanted texture still
most accurate mochi donut recipe i've personally come across so far. cooking the tapioca flour in the milk is KEY to getting the chewy texture, but soooo many recipes say to just throw the tapioca into the batter. i dont live near any good mochi donut shops so this recipe has saved me!

If you're using a Ziploc bag as a piping bag, I recommend not to cut the tip too big!! The batter was more runny than I thought 😅

I just tried this recipe but my mochi donuts got deflated after I pull them out... do you know why that was?
Did you perhaps open the oven door frequently? Doing that makes the donuts loose hot air that give them a bit of lift, hope this helped 🙃

Made this but idk what went wrong, it was clumpy idk how to dissolve the flour. the finished dough was softttt but i added more flour afterwards & turned out fine but its prolly not the best texture. The cooking part is somehow tricky. I wanna make this again tho cse it tastes good, just dk what to fix :((
Aww that's ok! There's a few thing you can fix. First, it's ok if the dough is a little clumpy after adding the starch, use a wooden spoon to smoothen it out the best you can. When adding the eggs make sure you add it slowly and stop adding when the batter is at the right consistency. You don't need to use all of it! Hope that helps 🥰

These turned out ok. Not bad but not really mochi doughnuts. The process wasn’t very easy so if your willing to go through it just go for the fried version.
