I've did dehydrated pimentos a few years ago and they turned out great. I live in Oklahoma... so I gotta find whatever way I can to keep some Caribbean flavor around☺

If you don't mind sharing, what brand/type of dehydrator you purchased? I did a search and there are quite a few to choose from. I'd like to make this but don't have a dehydrator. I know Chris said you can use the oven, but I'd prefer the dehydrator. Thanks in advance for your response.
Such a pretty bowl of peppers! I try every year to grow some here in Cali. No luck. I dont know if I am just getting crappy seeds or what? Very disappointing. Anyone have a link to a reputable seed seller?

Been doing that for years. Many summers the kitchen table had sheaves of herbs and spices drying. Dried chili petins are running out, so I have to do it again this year.

@Brian because the fresh leaves spoil quickly. It does not matter WHAT I do...I rinse in light vinegar water air dry wrap EACH leaf in paper towel and foil refrigerate... nothing doing....so since it is cilantro and parsley's cousin I thought it could be dehydrated and STILL preserve the intensity/ special flavor that is particular to shado.

Just planted myself some Habanero and Banana peppers. Haven't found Scotch Bonnet for a while. Here on other side of country stuff started growing overdrive this last couple weeks. Definitely need to dehydrate a bunch .

oven, very low heat
i do that all the time and make powder -- good on anyhting
flakes next.. then I'll share a powder like no other.. stay tuned
My air fryer has a dehydrator setting; would this still work with that or should i specifically get a machine that is for dehydrating?

size, heat level, colour and flavor.
The flavors are very different, in my opinion. I don't like the flavor of habaneros in island cooking.
This is awesome. Now, if only I could find Scotch Bonnets. They only sell habaneros in my area, and IMHO, the flavor is too different.

I think not, even in a dry 118 degree full sun heat they will just rot.

As a Jamaican, I HAVE to make a point of this : THESE ARE not SCOTCH BONNET PEPPERS !.. Might have SOME genetic material, but we call these cross-breeds "country pepper" here. A Scotch Bonnet has to be bred / grown away from all else, to preserve the VERY distinctive shape, (and flavor), ...looking like a 19th cent "Scotch Bonnet" (or lady's cap / hat)
These are 100 % Scotch Bonnet Peppers.. there are several varieties. You're working with a pepper expert here. I'm no rookie.

Billy Paul I ordered some yellow scotch bonnets on line last year from Litt Nurseery,n I believe they were in PA👍🏾
probably best to order online as I cannot guarantee these seeds will grow.

they are scotch bonnet not so take it from me
