    Chocolate Peanut Butter Fudge Brownie

    Brownie
    1/2 cup (45g) Cocoa Powder
    1 cup (140g) All Purpose Flour
    1 tsp (5g) Baking Powder
    1 tsp (5g) Salt
    1/2 cup (125g) Vegan Butter
    1 cup (212g) Sugar
    1 Large (170g) Banana, Mashed
    1 tsp (5g) Van illa Extract
    1/2 cup (80ml) Almond Milk
    Fudge Topping
    1/4 cup (45g) Coconut Milk, Full Fat
    2 tbsp (30g) Vegan Butter
    2 tsp (10g) Vanilla Extract
    1 tsp (5g) Salt
    2 cups (15oz) Dark Chocolate
    3 tbsp Peanut Butter, Melted
    2 tbsp Chopped Pecans
    2 tbsp Large Flaked Coconut
    Brownie
    In a medium sized bowl, add the cocoa powder, flour, baking powder, and salt. Whisk to combine.
    In a large bowl, add vegan butter and sugar. Cream together until light and fluffy. (I just used a bowl and a wooden spoon but you could also use a hand mixer or stand mixer fitted with the paddle attachment). Then add the mashed banana, vanilla and almond milk. Stir to combine.
    In stages, add the dry ingredients to the wet ingredients and fold to combine. Transfer the mixture to a greased spring form pan (I used a round 9” pan). Bake at 350F for 25 - 30 minutes, or until a toothpick is inserted and comes out clean. Let brownie cool while you make the fudge topping.
    Fudge Topping
    Melt the coconut milk and butter together in a double boiler (a bowl over simmering water). Stir in vanilla and salt. Then fold in the chocolate. Continue stirring occasionally until the chocolate has completely melted. Pour the chocolate mixture on to the cooled brownie (while it is still in the springform pan). Spread the mixture so it is in an even layer over the brownie.
    Add desired toppings: Drizzle with 3 tbsp of melted peanut butter, chopped pecans, large flaked coconut.
    Place in the fridge to chill for 6 hours. Once it has set, slice and enjoy!
