    Dark Chocolate and Guinness Dark Cherry Popsicles
    Prep Time: 30 Minutes
    Freeze Time: 4-6 Hours
    Yield: 10 Popsicles
    1 can of Guinness
    1/2 cup (95g) Full Fat Coconut Milk
    2 tbsp (30g) Vegan Butter
    1 1/2 cups (8oz) Dark Chocolate
    1/2 cup (140g) Silken Tofu
    2 tbsp (30g) Maple Syrup
    2 tsp (10g) Vanilla Extract
    1 tsp (5g) Salt
    1 tbsp (15g) Almond Milk
    1/2 cup (80g) Cherries, Pitted and Sliced in Half
    Using a double boiler (a bowl over a pot of lightly simmering water) heat the coconut milk and vegan butter. Fold the dark chocolate into the melted coconut milk until the chocolate has completely melted. Set aside to cool slightly.
    In a high speed blender, add tofu, maple syrup, vanilla, salt and almond milk. Blend until smooth. Fold the blended mixture into the chocolate mixture.
    Pour the filling into a popsicle mold, only filling each mold halfway. Add a couple cherries to each popsicle. Then continue filling, add more cherries, then fill the rest of the way. Add lid and popsicle sticks, then freeze for at least 6 hours.
    If the popsicles are hard to remove from the molds run hot water on the outside of the molds to help loosen them. Popsicles will last in an airtight container in the freezer for up to 6 months.

    Interesting concept, but I'm pretty sure guiness isn't vegan. The company uses isinglass, which is fish bladder.

      museofthepoets Thank you for the comment! It was released sometime last year that they changed their filtration process making their beer vegan
