Beef Ampalaya with Tausi Recipe | Filipino Cooking

  • Are you running out of ways to cook ampalaya (bitter gourd)? Spice up your usual sauteed ampalaya by adding marinated and seared beef strips with tausi (salted black beans) that were soaked and then adding your stir-fried sauce. Don’t forget the essential ingredients in the cook like ginger, onions, salt, pepper, sesame oil, and slurry to complete your tasty beef ampalaya with tausi dish.
    Ingredients:
    beef
    ampalaya
    ginger
    garlic
    red onions
    salted black beans
    sesame oil
    slurry
    salt
    pepper
    Beef Marinade:
    light soy sauce
    dark soy sauce
    cornstarch
    pepper
    oil
    Stir-Fry Sauce:
    light soy sauce
    dark soy sauce
    oyster sauce
    sugar
    Recipe:
    Step 1 - Prepare the ingredients of ampalaya (sliced and seeded) and soaked in water with salt for at least 30 minutes, onions (sliced), ginger (diced), garlic (minced), and the beef (sliced into strips).
    Step 2 - Combine light soy sauce, dark soy sauce, cornstarch, pepper, and oil with the beef in a bowl. Marinate for at least 30 minutes.
    Step 3 - To make the stir-fry sauce, combine light soy sauce, dark soy sauce, oyster sauce, and sugar. Mix. Set aside.
    Step 4 - Soak the salted black beans in water for at least 20 minutes. Drain and rinse.
    Step 5 - In a wok with heated oil, sear the marinated beef. Remove from the wok and set them aside.
    Step 6 - Next, saute ginger, garlic, and onions. Add the sliced ampalaya. Season with pepper and salt. Add the salted black beans. Add water. Cover to cook the ampalaya.
    Step 7- Add the marinated beef, the stir-fry sauce, sesame oil, and slurry. Cook for 2 minutes.
