    That sauce looks awesome. Today I did crushed tomatoes, 1 bushel made 21 quart jars.
    Yesterday I put up 9 pints of hot pickled peppers. I love canning!♥️👍😎

    Canning is so rewarding. Looking at the finished jars when they are on the shelf is beautiful, all the colors of the season. It's worth all the effort. You know what has gone into that jar.

    That sauce is so thick & looks wonderful. I bet the taste is awesome. Roasting adds such a depth of flavor. You are one of the few UA-cam channels that I trust for correct canning information. There are so many channels that give out false and often dangerous info. No matter who you watch, it is always best to double check the information. Thanks for taking the time to share with us. Words pale, and can NOT describe, I can't wait to try this, right now today it is 111 degrees in Arizona, so hopefully I can start some canning with my brand-new never used All American 921!     Love this. I used to can tomatoes a long time ago. I would buy the fresh tomatoes and then can them but I did it in quarters, if I can remember. I absolutely loved doing that kind of thing. Now it is just the two of us and I don't do much of that anymore although I do miss it. I don't have my canner so when I make sauce I just freeze it. Nothing is better than seeing all those jars lined up. It used to make me so happy. You are one busy lady and I admire all that you do. I know this comment is finding you after the accident. I hope you are doing better and getting the rest you need to heal. So sorry for your loss.

    A little baking soda in tomato based items like tomato sauce, spaghetti sauce and bbq sauce, etc, cuts the acid reflux, heart burn (etc) events. Love your videos! 1/4 Tsp to 1 cup sauce neutralizes acidity. Granted, I guess you would put it in after you re-open your product for use. 😉

    I need bigger and more pots. I have started back to canning now that I am semi-retired and have more time. I am amazed at how much you do Heather in one day.I see why you only sleep 4 to 5 hours a day.I am an 8-hour person myself .     I saw your video about roasting tomatoes, and decided to do the same with my half bushel. I roasted them with some onion, garlic and herbs. They turned out amazing. I made sauce out of it, and skimmed off the liquid, so it didn't need to cook for as long I let everyone in the family try it, and it was a hit. This one is a keeper. I got 8 750ml jars out of it. Luckily I have some pasta sauce from last year left. I think next year I'll get a full bushel and make sauce out of it.

I came directly from Paul's channel😉 I admitted to him that I know nothing about canning and rarely cook/bake anymore because unfortunately my job has been a priority these days. But, I do love your videos which make me happy. I use to love watching my Nonna can everything and of course being from Italy, sauce was a huge process as you know😉 Hope your feeling better Heather.     Heather, that sauce is beautiful and must be awesome to eat. My mom roasted tomatoes she removed the top stem and bottom, put fresh basil inside the core and roasted them.old fashioned years ago, knew no other way to make convenience and easy. She canned them just like that and water bathed them. Lots of work for her. My mom!Bless you Heather they looked.you are awesome. 👍👍👍❤️❤️

    We've never added citric acid to our stewed tomatoes or sauce, Heather, did not know to do that. What are the ramifications of not adding it? We are canning so much right now, it's insane. Today is chicken stew. Yesterday was chili with three kinds of beans and more Crowder and purple hull peas with ham. We'll be doing dry beans soon...just threw several huge containers of old dry pinto beans out into the pasture to dispose of them. Wow, they were awful, had turned almost black, even smelled raunchy, but I think they must have been 20 years old, LOL. They *do not* last forever, folks! We'll be canning our fresh bags we have stored in their plastic bags inside the food safe buckets so they are more ready-to-eat. And when my pears have ripened more in about a week, I'll be canning 10 gallons of Moonglow pears in some form. I did just get a new Presto 23 Quart canner on Amazon for just $83 w/ free shipping and then, POOF! Not available there any longer. Took a chance because they said it would not be delivered until October, but surprisingly, they already delivered it and we tested it this morning. Everyone is selling the same one for double and triple the price if you can find it at all. Guess I was just in time! We have a few canners now, but one day, I'll have an All American. That tomato sauce looks amazing. I think I can smell it through the monitor, LOL! ~Cynthia

      @@TheKneadyHomesteader Thank you! I asked my husband and he said it's prob the same reason some say to add lemon juice, to acidify it further. I was shocked that I got the canner a month earlier than they said and then, BOOM! Gone! I told my husband that if he ever sees an All American in his thrift store and flea market stops, grab it. Eventually, I'll buy one when they're not price gouging them on Ebay or they're available again from the company, sheesh.

    I am enjoying these videos. I got the Ball electric water bath canner for stock but so far I've used it to water bath jams and jellies. I'm just starting out and I'm bringing my daughter along. Our first batch was Noreen's Pineapple jam. Now I need to get going on pressure canning.

    Perfect timing, I have 6 gallon freezer bags of tomatoes from my garden, and once I collect my final harvest I plan to roast and make sauce to can! I also plan to dehydrate the skids for powder. I’m a newbee to gardening and canning, and really appreciate your Videos and experience!!! Thank you! I also watched the follow up video about need for acidification regardless of whether pressure or water bath!

      I think we can. She mentioned in another comment response that she used the slow cooker option on her Instant Pot and has it on low.

    Heather for pizza sauce you should give the Mrs Wages Pizza Sauce mix a try. For pizza sauce it is amazing! It calls for a bit more sugar for my taste but you can adjust that easily! Thank you so much for this video! I ended up getting 2 bushels of the roma paste tomatoes this morning! They were only $15 a bushel so I couldn't pass it up! I did discover that I'm just going to have enough jars to finish up tomatoes. I used all of my jars I had put back in case the freezer goes out! My husband didn't know I had them put back so when I asked him to bring up more jars he did! Just pray now that my freezer doesn't go out for any reason because I'm totally out of jars till they restock them and my freezer is all the way full!!!! Now I'll be able to get all wide mouth jars for the meat though so there is a silver lining to it all!! Do you have a email that you'd feel comfortable giving to me? I want to run something by you in a month or so...

    love using Tattler lids, when I bought mine they had two colors so all regular lids are green and wide mouth is white. It makes sorting lids so much easier. Just remember when using these lids add 1/4 inch to the head space the recipe requires. I will be trying this recipe it looks delicious.

      The other company....Harvest Guard, makes red tops, specifically for tomato products. hahaha They are sold out right now, but should have them back in a few months. I want to buy some of those!

      OMG, I LOVE roasted tomatoes! I oven roast my cherry tomatoes for recipes all the time. Last night I roasted eggplant and cherry tomatoes to make eggplant caponata. Yum! I do it a lot when I make ratatouille, or a simple sphagetti throw together. I might try roasting some for salsa. I just grew slicer and cherry tomatoes, which are a bit juicy; you really need a meatier tomato like Roma or San Marzano for thick sauces. I will grow those next year!

    That sauce looks amazing! My entire tomato crop was destroyed and I hadn’t planned on canning any this year but now I might just go out and find some on sale 💜 Careful with those tomato skins they have some icky stuff in them that’s bad for joints.

      @@TheKneadyHomesteader True! All nightshades should be peeled and seeded (tomatoes, peppers, eggplant etc.) That's the only way Native Americans would eat them.

    I must have learned more about canning than I realized because when you didnt put citric acid in the second jar my eyes got big and I held my breath till you remembered lol. Im so glad you remembered lol. Youre brilliant, using the nasty skins (in my humble opinion) and making roasted tomato powder is fantastic!     That sauce is perfect! I only got three pints earlier this year. I have my water heater turned up really high (no Littles in my house) so I run the hot hot water in my jars to heat them up too. I found if I heat them in the waterbath canner they get that hard water discoloring on the inside of the jar and it clouds up so my product doesn’t look as nice so I started doing it in the sink instead.

    I keep my salad dressing( Mayo) jar lids and use them on my opened jars in fridge. Recycle at its best. Win win ! Thanks for your great videos! Awesome job ...💗 where do you get your regular lids ? It looks as you get a large bulk order. My new for this year was we . Roasted our veggies on the grill. Omg ! Unreally salsa with the smoke grill taste. YumO

    Looks amazing. Just for clarity, I thought tomatoes were one of the more acidic foods that you can water bath can with no problem and didn't need citric acid?

      You still need to add citric acid because all tomatoes have different levels of acid. Yes, you can hot water bath for 40 mins.

    I have 14 quart jars of pinto beans sitting on my counter waiting to go in the pressure canner, I soak them into jars over night to help with tummy issues. BUT I am running to the farmers market to but bushel of Roma tomatoes to roast and make some tomato soup with!
    I planted san marzano tomatoes but you know MI time frame planting season is a bit crazy. I am picking them as they ripen and freezing them. So this winter I will pull them out and can them. I may try roasting them as well but not sure how that will work 🤔. I usually water bath my tomatoes but I pressure canned my crushed tomatoes and I will never water bath them again! They color alone is so much more beautiful!

    Thank you. I could not wait to see the outcome. My only question is... did you leave the lid on or off of the tomatoes overnight? Wasn’t sure if you placed them in the insta pot to reduce???

      I left it off until I went to bed, which was at 3:30am because I was answering comments to the wee hours! hahaha then i put the lid on, because i am paranoid something will get in my sauce! LOL like a fly! hahahaha I am a FREAK! I was up around 6:30-7am and I took the lid back off. It reduced quite a bit by the time I canned it, which was around 8am or so.

    Oh, I can't wait to try that. Looks delish.
    I'm a newbie, and don't quit understand the jiggling part of the pressure canner. I know you said it has to jiggle only 4 times per minute, I know you slowly turn up and down to regulate, but how do you make sure it ONLY juggles 4 times a minute. So confused. Please help. Lol

      it's 1-4 times per minute. if it jiggles constantly, it means your heat is too high....running your canner too hot can cause syphoning of your jars. Headspace is important for shelf stability. You will learn your canner and your stove, and find the sweet spot your canner likes to run to hold that pressure nice and steady. :)
