Heather, have you pickled onions and bell peppers for burgers? My brother was given some and we tried them at a cookout, they were so yummy on the burgers. They were all rings. So, so, so good!
not peppers....YET! But if I can get enough out of my garden Im going to give it a try. We eat a lot of locally made brats on the smoker, and pickled onions and peppers would be phenomenal on those hoagies! hahaha

How long do you think they keep their 'body' on the pantry shelf? I made a pickled red onion recipe from the Food in Jars blog (very safe recipes) and was disappointed that they went to mush after about 8 months on the shelf. We can't get through a batch that fast. Well, maybe if I should try again with the Mrs. Wages Extra Crunch. Thank you for inviting us to share your canning. You are kind and a dear daughter of Christ, Heather. My current canning is our 'Chehalis' apple tree which only makes applesauce. Period. hahaha I found that my grandbabies LOVE 'fruit rollups' made with applesauce and a box of flavored gelatin last year. Not the totally healthiest snack but so much better than just commercial produced junk aimed at kids. Now this tree has a purpose. I wondered...but God never makes a mistake. :) Thank you for showing the rapid boil stage..I've seen so many other YT'ers who show their boiling water canning with only a mere simmer. yikes Keep putting out this good safety info!

My son got married in Montana, at a destination wedding. His wife's family is quite wealthy, so they planned a week of activities the week before the wedding , all the way through the day after the wedding. They arranged sack lunches from a restaurant, and the sandwiches, on homemade sub rolls, came with pickled red onions. I was 58 years old at the time, and have never had a pickled red onion. I immediately took it off, thinking it would upset my stomach. I was wrong! I tasted one piece, and replaced the remaining pickled onions, and was on a quest to find the best recipe since that day. Finding a ratio of balsamic vinegar that works, I think is the answer!
Whata story! thank you for sharing that with me, Lisa! You should hunt around for a recipe that includes balsamic. Some recipes dont need to be canned, they keep right in the fridge, ready to eat!

I love pickled onions in my chicken rice bowls with cilantro lime rice. 😋 Did you say these will still be crunchy? I usually do the fridge pickle method, but to have some canned on the shelf would be awesome!
oh yummmmm!!!! Yes, I add xtra crunch from Mrs Wages to it.....they keep your canned picked crunchy too!!!! it won't be like raw, but it will have a bit of crunch!

I made pickled onion one year and I didn't have the spice called for in the recipe so I substituted 2tsp. of pickle seasoning for it. They turned out very well. The dozen jars I made were not enough for the year. I wish I made more.
I did half white vinegar and half balsamic vinegar! I think I would add 1/3 of each next time, and 1/3 water. It was DELICIOUS! I DIDN'T CAN THEM. I MADE A QUART FOR MY DAUGHTER AND A PINT FOR ME, AND THEY'VE BEEN IN MY FRIDGE FOR MONTHS! THEY'RE STILL CRISP AND DELICIOUS! (I ran the onions in cold water until the water ran clear, to help with some of the paper gas that is released that burns your eyes. I used a mandolin to cut them, and they went so fast, I was shocked. ...some of the shock could have been from the blood loss when I sliced off part of the top of my finger! They warn you it's sharp, they MEAN IT!! I lost some onions with my finger!!! Tip when cutting onions....run a fan and have it blow towards you, so as the gases rise from the onion, the fan blows it away, before it reaches your nose and eyes! I got it from a sweet Michigan UA-camr!!
great tips!!!! Mason did research on it and told me to keep a wet towel near me....onions are drawn to moisture, and the towel absorbs it so your eyes dont. it works. hahahaha

this is sweeter becausee of the added sugar, they aren't so bitter tart like using straight vinegar.....no dill in it so you won't get that dill pickle taste.....no spice just dont add any banana peppers like I did!
Can you tell me how to store my cellery I have tones. I trust your ideas and have made many of your things...love the sub rolls I also use them for my little ceaser copycat bread sticks because I won't eat there anymore from getting food poisoning twice. Can you help me with some cellery ideas please.
When u soak yr lids in the soap and vinegar do u rinse them off then soak in plain water?? Since covid I seem to have 1-2 jars that don’t seal. Thank u! 😊
YES! I wash in hot soapy water with a splash of vinegar.....then rinse well, and place in HOT water! that will soften that plastisol up making it easier to seal. I see so many people having issues with Ball lids, and I honestly don't. These lids were Bernardin, but same company essentially. They sealed great! All sealed no problems. :) But I learned from the old school canning queens here on YT..... and their way has never failed me.

Man, sugar is horrible for you. It does nothing good. Breaks my heart that so many nummy recipes have sugar. And so much!😮
You can do this with no sugar! Just vinegar and salt. It will have a bite though, but you can find that recipe on Ball’s website if you do believe! 😁
