One question is on your last example wired for 120v you showed the orange jumper from 120 to the C terminal with the yellow from the NC terminal to the solenoid. I’m confused about the red coming from C (where the orange jumper terminates) but where does the red terminate? The diagram didn’t show a second wire coming from C. What am I not understanding? Thanks for taking the time to explain.

Was wondering the same , I don’t think there should of been a second wire coming out of the c terminal in both examples 🤷🏻‍♂️ as per the diagram

Looks like according to his schematic, he ran the N back to the Common on the bottom contact instead of back to the Neutral side of the load.
Could use some clarification on that cause it looks like he would just be shorting the contacts by sending N back to its hot side.

HVAC student here from Canada. How would you connect this to a defrost timer? ..or is it odd to wire it up with a defrost timer?

This would be wired on the NC portion of the defrost timer. So when the defrost timer is not in a defrost cycle, it is supplying voltage to this thermostat. When the box temp rises above the thermostat setpoint it will open the solenoid and allow refrigerant from the receiver to feed the evaporator. Once the evaporator picks up enough heat, the liquid refrigerant is boiled to a gas and the low side pressure (back pressure rises). On a separate circuit is the low pressure switch, once the low side pressure exceeds the setpoint of the low pressure switch, it activates the compressor and the refrigeration cycle begins.
Once the box temp reaches below the setpoint of the thermostat, the thermostat no longer energizes the solenoid and refrigerant is no longer fed to the evaporator. The low pressure switch continues to energize the compressor until it reaches its low pressure setpoint (usually around 5psi) and the refrigerant is pumped into the receiver (aka pumpdown).
