    Ingredients:
    For Bhalla (Fritters):
    1 cup urad dal (split black gram), soaked overnight
    For Dahi (Yogurt Mixture):
    2 cups plain yogurt
    1/2 cup water
    Salt to taste
    1/2 teaspoon sugar (optional)
    For Garnishing:
    1/2 teaspoon roasted cumin powder
    1/2 teaspoon red chili powder
    1/2 teaspoon chaat masala
    Tamarind chutney
    Green chutney
    Fresh coriander leaves, chopped
    Pomegranate seeds (optional)
    Instructions:
    1. Prepare the Bhallas:
    Drain the soaked urad dal and grind it into a smooth paste, adding water as needed.
    Add cumin seeds and salt to the batter. Mix well to aerate the batter, which helps in making the bhallas light and fluffy.
    Heat oil in a deep pan for frying. Drop spoonfuls of batter into the hot oil and fry until golden brown on all sides.
    Remove the bhallas from oil and soak them in water for about 20 minutes. Gently squeeze out the excess water before assembling.
    2. Prepare the Yogurt Mixture:
    Whisk the yogurt with water, salt, and sugar until smooth and creamy.
    3. Assemble the Dahi Bhalla:
    Arrange the soaked and squeezed bhallas on a serving plate.
    Pour the yogurt mixture generously over the bhallas.
    Drizzle tamarind and green chutneys over the yogurt.
    Sprinkle roasted cumin powder, red chili powder, and chaat masala.
    Garnish with fresh coriander leaves and pomegranate seeds for a burst of color and flavor.
    4. Serve:
    Let the Dahi Bhallas rest for a few minutes to absorb the flavors. Serve chilled or at room temperature.
