Renet is actually added to coagulate the cheese and make it bind which gives mozz cheese the signature stretch but u have also done a good job here

I have tried some of your recipies but not any of cheese, as I think it takes effort and time which can be conserved in this case. But I always think, that cheese making process is almost same in all recipes( at least in homemade recipies) why do cheese taste different?
