Bangladeshi curry is much better than other South Asian curries. Texture of the gravy seems mild, not too much butter and ghee. As far as I know curries varies from place to place in Bangladesh, in some places people use less spice but they use onion, ginger , and coriander leaves a lot.. Bangladeshi food is really underrated, it should be promoted in the world.. Thanks Mark for giving us a comprehensive food tour in Bangladesh.
The way mark is so down to earth and so humble and showing respect to my country my culture is really making me eye's full . He was not even complaining about the hygiene, about the atmosphere not even is that place cheap or not ; he was just just blindly enjoying that food ! I have seen many so called posh bangladeshi people to complain about cheap street food, village food but after seeing mark and his humbleness making me love his personality more ! Thanks to Rasif vaiya and his family to give this much effort to make this happen !
The typical cuisine stereotype they have for Bengalis is that they only eat and consume fish. After watching Marks series of Bangladesh, I realized how diverse and delicious the various food dishes are. From the main entrees, to the street snacks. So unique! Would love to try one day!
Well never stereotype. It’s mostly, a certain ignorant south asian neighbouring countries, thinks that way of us. But our food/cuisine is very diverse and has its own unique take.
The roti is a traditional food of the Rajshahi region. Traditionally it is consumed with chilli sauce with mustard oil. The duck curry and everything else you had, are added with this occasionally. This is basically the food for the hardworking people working in the field like peasants and so, for them to work for the whole day as this dense roti remains in the stomach for a really long time and energises them throughout their work.
An amazing subaltern dish, man. I discovered it for myself in 1994, and since then it has been remaining one of my favorite dishes. But you have to consume it just after being prepared. The more time it passes, the less it stays with the charm & taste.
Shoutout to petuk couple for introducing mark to these underrated yet original Bangladeshi foods. You know you can't find this exact dishes anywhere else but in Bangladesh.

The tea sort of reminds me of the German bierstacheln. Bierstacheln, meaning “beer sting” or “beer spike” in German, is a process during which a short metal stick called a bierstachel (pronounced “beer shta-hll”) is heated to about 600° C (1112° F) and plunged into a malty beer for a few seconds. This caramelizes the residual sugars in the beer, creating a toasted marshmallow-like flavor and a dense, long lasting foam. The main difference is that with a bierstacheln, the introduction of heat to the beer is very brief so the beer is still cold - only the foam is a bit warm (the contrast is actually very pleasant). But with this tea, it has contact with the heat for much longer, which most likely results in water evaporation, creating the rich body and mouth texture they're experiencing. I love both beer and tea and would love to try this. I may have to try and recreate something similar.

50 years ago my mother would go to a quail ranch cook store and buy me cooked quail wings in a tray. Seems small and simple, but they were really great to an 8 year old. When I saw the quail it brought back 50 year old memories. Quail is wonderful.

I am originally from Chapai Nawab Ganj where this bread originated. Never in my lifetime, I thought, I would see Mark Weins vlogging on 'Kalai Roti' . The ingredient of this roti is 'Maskalai Daal' or atta made from 'Maskalai lentils'. It's actually a south east asian specialty, not found in other parts of the world. Kudos to Rajiv and Mark Weins!!

it is high time someone promoted Bangladeshi cuisine which is what mark is doing.and i am very happy for him because of that.he got my respect because like a real food vlogger he actually went to the country side to get the real taste of Bangladeshi cuisine.and Bangladeshi cuisine is totally different from indian. The usage of spices is also different. Hi Mark, Kalai Roti is basically made by Urad dal and rice flour mix. This food is famous in the city called Chapai Nawabganj. The guy who is making the roti is not that much expert I can see. The roti has to be puff up and upper part should be very crispy. However you must visit next time to Chapai Nawabganj to get the authentic taste of Kalai Roti. Much Love from Chapai Nawabganj

Mark if you come to Bangladesh again, try the variety of hot spicy dried fish Bhorta and dried fish curry in Chittagong. Also, try the desserts especially Comilla's Roshmalai and Tangail's Porabari ChamCham. You are the best.
Chittagong has rich see food items. But unfortunately they only show thir "masbani beef". Chittagong peoples are not well educated for their foods and cultures
In the northern part of Bangladesh Eggplant vorta is made with fried green chilli & onion with mustard oil that brings a different taste! Very amazing! Yeah. That chilli chutney is out of the charts spicy. Even Sean from first we feast would have trouble eating that. This is not western dumb down version spicy, this is real spicy.

I think Bangladeshi food are the epitome of comfort food. As you said, our foods are flavorful but not too rich or complicated.
You may find oil on our food too.. but we also have same curry with less oily version..
They own all the 'Indian' restaurants in London.

it is high time someone promoted Bangladeshi cuisine which is what mark is doing.and i am very happy for him because of that.he got my respect because like a real food vlogger he actually went to the country side to get the real taste of Bangladeshi cuisine.and Bangladeshi cuisine is totally different from indian. The usage of spices is also different. I hope people would come to Bangladesh and go to unbeaten paths and country side avoid the poplar restaurants and find and enjoy real Bangladeshi food.food all regular Bangladeshies eat.

Hi Mark, Kalai Roti is basically made by Urad dal and rice flour mix. This food is famous in the city called Chapai Nawabganj. The guy who is making the roti is not that much expert I can see. The roti has to be puff up and upper part should be very crispy. However you must visit next time to Chapai Nawabganj to get the authentic taste of Kalai Roti. Much Love from Chapai Nawabganj

Mark if you come to Bangladesh again, try the variety of hot spicy dried fish Bhorta and dried fish curry in Chittagong. Also, try the desserts especially Comilla's Roshmalai and Tangail's Porabari ChamCham. You are the best.

In the northern part of Bangladesh Eggplant vorta is made with fried green chilli & onion with mustard oil that brings a different taste! Very amazing!
