Actually, if you start a fire and let it burn hot with the dampers open for 15 minutes most of the hydrocarbons (moisture) will exit the chimney with the higher airflow. Then start closing the dampers. There will be much less black smoke.
After 30+ years of not burning the smoke ---and getting a chimney fire in the process) our new BK with cat is smokeless (after a 15 minute warm-up if needed). It's a clear-cut distinction and the stove is more efficient in providing heat. Without the cat the fire will not easily control the air supply, hence the wood usage will burn quicker or the fire will give much smoke
If I understand, you are saying maybe just a bit of smoke during the first 15 minutes or so until its hot... Just two cents (I have been working hard to improve the efficiency on ours). A top down fire to get started has been a good way to produce zero smoke during start up. Even with an older pre-EPA unit. I've watched the stove pipe from outside many times doing this now with no visible smoke. There are tutorials on the internet, but basically you just start with the largest pieces on the floor and work up to kindling and starters/paper up top. Of course, I would love newer stove too!

Does that wood stove even have an upper baffle? A new EPA (well really not new, well over 30 years now) stove will have secondary burn going at a much lower temperature without over firing the stove. That stove in the video needs to running full tilt and hot to achieve secondary burn and probably isn't doing it nearly as well as a proper EPA stove will at a much lower temperature.
Really and your a professional? No mention of temperatures no mention of moisture content. No mention of newer stoves and how they work with much less air. Pretty sad honestly

New stoves are costly, but he would cut his fuel consumption way down and get cleaner burns with a new EPA rated stove. Love my Kuma hybrid.

Mine is classical iron cast same for me. I lower air intake and no smokes. He should use that old ass stove anyways lol
