  • We made the classic Christmas cake, strawberry shortcake.
    It is made from a separate sponge cake that is easy to make, keeps the cake from falling apart, and melts in your mouth. It can be made with either rice flour or cake flour.
    The mascarpone cheese added to the heavy cream makes it rich and tasty, and the cream gives it firmness, so the cake is less likely to fall apart.
    Cut the strawberries between the cakes in half lengthwise to get the full flavor of the strawberries. If you slice them and place them evenly, you can enjoy strawberries no matter where you eat them from. Personally, I prefer to cut the strawberries into large pieces, as they are still a bit bland this time of year 🍓.

    Sponge cake
    2 whole eggs
    60 g sugar
    60 g rice flour
    10 g water
    8g thick sesame oil
    1 tsp vanilla extract (or vanilla essence)
    Whipping cream
    300 ml heavy cream
    100 g mascarpone cheese
    40 g sugar
    1 teaspoon vanilla extract

    ▷How to make:
    1. Add sugar to egg whites to make a meringue.
    2. Add egg yolks and mix.
    3. Add rice flour and mix until powdery.
    4. Add the batter to the water, white sesame oil, and vanilla extract.
    5. Bake in a preheated oven at 170℃ for 20-25 minutes.
    6. Remove from heat and slice into 3 pieces.
    7. Beat heavy cream with mascarpone cheese, sugar and vanilla extract while chilling.
    8. Spread the sponge cake with heavy cream and place the cut strawberries in between.
    9. Squeeze the remaining cream and decorate with strawberries and macaroons.
