- Karaage (Japanese fried chicken) is easily one of the greatest fried chickens in the world. It’s exceptionally flavorful, juicy and ultra crispy, and absolutely worth hanging out at the stove for! Learn the simple techniques and fry up some glorious chicken at home today.

INGREDIENTS
1.5 lb boneless skin-on chicken thighs (680 g or 4-6 pieces; Read the blog post)
½ salt (kosher or sea salt; use half if using table salt)
Freshly ground black pepper
2 Tbsp potato starch/cornstarch (Add more if necessary; Read blog post)
2 Tbsp all-purpose flour (Add more if necessary)
neutral flavor oil (vegetable, canola, etc) (for deep frying)
- Seasonings: -
1 knob ginger (You'll only need ½ tsp grated ginger)
1 clove garlic
½ Tbsp soy sauce
½ Tbsp sake (Sub: dry sherry or Chinese rice wine or skip)
½ tsp sesame oil (roasted)
- Garnish (optional) -
Lemon (for taste and garnish)
Japanese mayonnaise (optional for dipping)
Shichimi Togarashi (Japanese seven spice) (optional for spicy taste)

I made this today… after the first bite, it reminded me of the first time I tried it at that one busy restaurant at Shinjuku district… I got teary eyed….

Got a tip. To scoop up those tiny bits on the bottom of the pot, after to take out your chicken, swirl oil gently until the bits and pieces swirl to the center of the pot. Scoop it out. Repeat if need be. This especially happens with panko flakes.
I've never seen fried chicken being cooked so neat and meticulously.
Followed the recipe from the website (a little different than the video). My wife is now very upset with me because in her words "what restaurant is going to make karaage this good?!". Thank you for the recipe, it was delicious! I subbed Suntory Whisky for the sake since I didn't have any and it seemed to work fine.
Nami's recipe for Karaage is the only one I use when I want fried chicken. My family loves it.

I've never seen a twice fry recipe for chicken (usually just for chips). It gives the chicken that unique Karaage dark appearance. Delicious! 🤤

I have done this kind of fried chicken before, but I made a dough with cream, egg yolk with chicken breast. It was really delicious, but I'll try your for my next bento box. Just subscribed to this channel, looks very interesting.

Thanks for the video, the karage look so delicious. I don't fry very often, curious what do you do with the oil after frying.
I usually schedule 2 deep frying dishes during the week - one can be main dish, second time can be appetizer (less oil for small amount of dish). :)

I usually deep fry one more time within a week. If i use the oil for a main dish, the second time (less oil) will be appetizer or smaller dish. :)

Hey Nami ~ I absolutely love your karaage recipe and have been using it for years! It always produces the most crispy and tender karaage :) One question: you previously recommended adding the potato starch and flour directly into the bowl of marinated chicken (rather than dredging each chicken piece separately as you do now) before frying. Just wondering why your recommendation has changed? Do you find dredging the chicken pieces separately makes them more crispy in the end...?
Hi Neal! Thank you for your kind words! I mentioned in the blog post that you can premix these two first, but I learned that dredging separately produce a better result (in my opinion) so I updated the recipe (with the better result). The flour will trap the marinade and potato starch in the outer layer for crispness. It's just a little more work but I think the result is better. :)

What is the plate with the wire rack called?
Nami-san, can I change the sake with vinegar? Its quite hard find sake in my place
How about dry sherry or chinese rice wine? Sake is Japanese rice wine and it's different from rice vinegar. Vinegar doesn't remove the gamey odor like sake does. Also vinegar adds acidity... it's like white wine vs. wine vinegar, two different flavor notes. :)
Just One Cookbook ah I see, I thought sake main function in this dish is its acidity. Chinese rice wine is easier to find, okay I’ll try with chinese rice wine. Oh by the way, I’ve tried to make your fruit sando recipe and it really oishii. I use cheap fruits and cheap whipping cream(a good one is quite far from my place) to make your sando and it exceed my expectation. Arigatou Nami-san
