Matcha-Milk Tangzhong Bread RECIPE | The Tummy Train

  • Soft and fluffy Matcha Milk Bread made with the Asian tangzhong method. Definitely one of my favourite ways to make and eat bread!
    For the Tangzhong:
    1/3 cup bread flour
    1 cup water
    For the dough:
    2½ cups bread flour
    3 Tablespoons sugar
    2 teaspoons instant yeast
    1/2 teaspoon salt
    1/4 to ½ cup milk
    1 large egg
    120 grams tangzhong (just a little over half of above recipe)
    3 Tablespoons butter (cut into small pieces, softened at room temperature)
    1½ to 2 Tablespoons matcha green tea powder
    Egg wash (1 egg with a bit of milk or water)

    What if i want to bake more can i double the measurement of the recipe?I wanna try instead of plain mixture i wanna use purple yum is it ok?

    Hi, I notice you're using a kitchen aid stand mixer, may I know at which speed did u use for the 10mins kneading. I had to go for 20mins on speed 2 on mine and it still didn't pass the windowpane test

      Jessica Seah Hi Jessica, I knead on medium, around speed 4 or 5. But you could try lessening the amount of water you use if the dough is too wet and you can't do the windowpane.

      Jessica Seah I make this bread a lot and mine has always required 20 minutes needing on speed 2. I don't go higher because the manufacturer recommends bread kneading at no higher than speed 2. One way to lessen mixing time is to let dough autolyse for 30 minutes before adding butter.....just mix all ingredients EXCEPT butter just until combined. Cover and rest for 30 minutes. Add butter and continue with mixing/kneading. I can get away with as little as 15 minutes of kneading with this method.

    Hi, can I use a sourdough starter and not using yeast?

      LoVe Cheong Hi there! The sourdough starter will probably yield a bread with a different texture. Perhaps you can try a recipe that makes real sourdough bread instead? :)

    I dont have stand mixer, would hand mixer work??

      You will need the dough hook attachment for your hand mixer because the normal attachments cannot knead dough.

    Hi, can I use dry yeast if I dont have the instant one?

      Thanks! But question, if we only need a little more half of Tang Zhong for the dough, why not just make that amount of Tang Zhong? Or what are we to do with the rest of the Tang Zhong?

    I gave up your recipe in the end.... too much to convert.... 👎
    And, ratio for tangzhong is 1:5
    Yours' 1:6
