- Another recipe for a gluten-free baguette, this time without eggs or milk, so a vegan recipe, that includes one of my favorite gluten-free flours - the oat flour.
The oat flour I am using in this video is homemade, it is just rolled oats blended and sieved.
To make 2 gluten-free baguettes you need:
200 g of rice flour
100 g of tapioca starch (or any other gluten-free starch)
80 g of gluten-free oat flour (rolled oats blended and sieved)
6 g of xanthan gum (2 tsp)
6 g of salt (1 tsp)
1 Tbsp of sugar or honey or maple syrup
6 g of dry active yeast
+/- 300 ml of lukewarm water
30 ml of olive oil (2 Tbsp)
7,5 ml of vinegar (1,5 tsp)
