Hey! I know this is an old video but I’m curious. Is it the norm to just harvest the legs and dispose of the rest of the carcass?

Hey mate. We've got a few videos on our channel on breaking down or field dressing wallabies/kangaroos. Jump to our channel homepage and you should be able to find tutorials on how to field dress a kangaroo (filmed in daylight and shows how to gut) and how to bone out a kangaroo leg (once you get it home).

G'day guys, what do you do with the wallabies? I've eaten roo many a time but always thought wallaby would be as tough as an old boot.
Hey mate. We wet age (vacuum seal with the GameSaver and leave in the fridge for 7-14 days) all of our wild game meat, including wallaby. Keeps it really tender and also helps to reduce the gamey taste that some people aren't a fan of.
How come you don't just gut the animal out and carry it back whole? seems like a lot easier way to get all the useable meat off the carcass, that's what we do with wallabies down in NZ.
