I hope your school is getting back to "normal" during this horrible time of pandemic. I'm busy to work out a Sweet and Sour chicken dish with pineapple but without the lot of deep frying... In short, chicken fillets cut in cubes, cooked in water or stock for a few minutes then only "wok" with the sweet and sour souse and some peppers. Meaning, cutting out the eggs, corn flower deep fry oil etc. Maybe just as tasty, more healthy and looking good.
I have cooked this dish several times and it always turns out great. My eldest daughter turned vegetarian and I thought we would not be able to enjoy this dish again, but I did half chicken and half Quorn pieces (in two separate woks) and it worked extremely well. Worth the extra washing up.
Hey Jeremy: good point about the cooking on your own wedding! I did that on our 1st anniversary. And my insisted on someone else cooking on our 2nd one :-) Surely gonna try this one. Great idea, using the skin and core of the pineapple!
Just made it and my kitchen smells delicious! I’ve not put it all together yet as it’s for dinner but everything is gorgeous, pineapple, chicken and sauce. Thanks for recipe Jeremy. (I tried to attach photo but cant😂)..
I really don't like deep frying and don't really have the ability at home. Can you also show us a home fry method for some of these? Other than that, looks delicious and very easy. :D
Love your channel Jeremy. Picked up a fresh pineapple from the grocers and will try this tomorrow. Can i substitute pork shoulder instead of chicken thigh?
I really like fresh pineapple and being Australia we grow great pineapples but fresh really irritates my mouth and tongue, I’m guessing it’s the acid in the fruit so I generally avoid it but I really enjoy tinned/canned pineapple as it doesn’t irritate my throat at all. Do you know what the difference is?
Loved this recipe like every others. Could u plz make a video for hot garlic chicken? Am looking for an authentic chinese version of this recipe for a long!
Lee and Jeremy, if you can throw the pineapple on the barbecue and get some smoky flavor, that really adds to the complexity of the dish. It is nice to have some pineapple like that on hand if you have the means to do it.
Hi Jeremy I'm sure this is a daft question but can I fillter the oil out so it can be used again or is it a case of use once and throw away I hate waste thank you for your videos
Yes you can, and a coffee filter is a good idea to use. The order of use should be veg, meat, fish and if you do't overheat the oil it could be used 5 times, so 2 veg then 2 meat, then 1 fish. Or all 5 of the same thing.
Please...for the love all things sacred...get somebody who knows how to operate a video camera. I want to watch your videos but the constant shaking and jittery motion kills it for viewers. I had three people watching this video together and every single person couldn't continue. Use a gimbal!!

You’re welcome!
I like the cat on the shelf behind you
You know it’s about to get real when he talks about sauces in terms of compiling them!
Looks so good. Definitely going to try this one.
Haha, that’s the best part
Can you use the juice from canned pineapple to add flavor to the sauce instead of the discared pieces from a fresh pineapple?
I have no words. Stunningly beautiful.
Glad you enjoyed it! - Lee
Great! Just bought chinese unchopped.

Why don’t you have the ability? You just need a deep pan and oil
Love your channel Jeremy. Picked up a fresh pineapple from the grocers and will try this tomorrow. Can i substitute pork shoulder instead of chicken thigh?
Sorry for the late response, you could definitely use pork shoulder! - Lee
this is amazing!!

How do you compare using a carbon steel wok on a modern induction cooktop with a quality gas burner, do you have a preference?
Looks delicious!
It really was!
I have a question for everybody....what type of oil does Jeremy use for the deep frying and is it the same oil he uses for stir frying? Thanks!
We use vegetable oil for both :)

Good tip!
Wok on flat induction surface, my sides !! lol

Thanks!
Hi! Can you do a Filipino pantry?
awesome
Damn that looks so good!
Thanks!
One of my favourite. Sweet and sour anytime :) Cheers.
Thanks!
Jeremy you cook for your wedding. That shocks me
Corn flour is corn starch right?
Correct
Hi will this work with tofu instead of chicken?
I reckon u can just make the sauce and dump the tofu in at the end
Absolutely! You can still marinade and deep fry the tofu!
Ooooo, you are lucky you cut the ends off the capsicum! I can’t stand when chefs waste food!
What would have happened if he didn’t? That sounded vaguely threatening hahaha
School of Wok 😂 unsubscribe.. just kidding!
Really like your Cleaver knife. Where can I buy that from n who it's made by please? Thank you.
Buy from his website
Thanks! This is our product but it’s out of stock until August
Why don't you know why Jeremy lol...its fab lol. I need to find this vinegar. PS never baked pineapple before....im going to now
Haha, he was being sarcastic ;p
@@SchoolofWok I know lol I bought two pineapples today and I'm making this jeremy
What happened to your indented induction burner that was made specifically for the wok?
We had our kitchen refurbished

Cooking at your own wedding, or being the photographer at your own wedding, which is worse, or that even possible.
How are you not 150kg.
You know what they say never trust a skinny chief lol just joking.
Absolutely love your channel my man.
Haha, moderation is the key! - Lee
You’re missing the rice, integral part of the meal for me
Just looked up Jeremy's second book on Amazon. It's marked at $869.97 USD for a used copy. Oh, plus $3.99 shipping....... I shall look elsewhere!
hi
So I just bought your book called essential Chinese cooking and it seems like the same book as unchopped.. Whats different
Is carbon steel magnetic?

Don't worry, we're going to be using a tripod for the close-up camera. It's a big heavy camera without a shoulder mount, so a gimbal won't work.
Really bad the sauce was wAy to sweet

@ 07;17 you crack an egg into the main dish directly, A BIG NO NO. You know it & I know it, unsubscribed now.
No, you crack the egg in so the cornflour sticks to the chicken better
@Eric etc. So much anger! But i guess it’s a big responsibility policing UA-cam.
