    Larestan is in Fars province. Four hundred kilometers from Shiraz, the province's best-known city, it's not one of Iran's most visited corners.
    Larestan sits in the desert, close to the other Arab countries of the Persian Gulf. It has its own dialect but no oil and little in the way of other mineral resources. It has no sites of particular interest to tourists or pilgrims. Very few Iranians from elsewhere in the country have ever been to Lar. Anyone who does go will likely be surprised by the small city's wealth and the fact that it is served by an international airport and a six-lane highway.
    This Chenjeh kabob Larry, is one of the best and tastiest Persian kabobs.
    Ingredients:
    2 lb beef
    ¼ tsp coriander seeds
    ¼ tsp white peppercorn
    ¼ tsp black peppercorn
    ½ tsp salt
    ¼ tsp paprika
    2 to 3 tbsp concentrated yogurt

      Sure will do that!
      You can use and good beef cut as long as you like it! I used part of Rib Eye.
      The good thing about this recipe is: concentrated yogurt will make your meat very tender. 💓💓💓💓💓💓💓

      If I am not wrong, I think so. As far as I know; Labneh is like concentrated yogurt or sack yogurt.

    Excellent - thank you, chef! I am from Lar and living in the US for a long time. I loved all the details you shared, especially letting the meat dry. I remember my parents used to blow the cubed meats using a fan for almost a day (not soaked in the marinade yet). This helps to keep the juice inside. The marination is another day of course! Love you Chef Kooroush; I watch your videos as soon as they are out :)

      My grandfather from my mother side use to do the same way. Unfortunately, I couldn't ask people to do that, and that was the reason I used towel and pressed the meat.

      The pleasure will all be mine. I would be happy to meet you as well. Fortunately, I sold the Shiraz Restaurant on Jan 2018. Restaurant business is one of the hardest and not everybody can run a restaurant. And unfortunately, buyer sold the restaurant less than 1/3 for what he paid for, and now it's a Raman Restaurant.

    Fantastic video. Yeah, Kababe Lari is really tasty. the only thing that I heard from my Lari friends is that they used to hang the meat or keep it in front of Fan (پنکه) for hours or even 1 day then they start the marinating process.
    Anyway another educational video, well done.

      You are 100% correct. My grandfather use to use fan for over night,
      I didn't want to scare the audience that is what I showed them the short and fast version and used the paper towel

      But it is very easy. just put some yogurt in the cheesecloth and hung it for 5 to six hours and let the juice or water from yogurt to drain!
      That is how to make it concentrated. Don't worry it the yogurt it out of the fridge, noting will happen.
      As you know the yogurt is a bacteria itself. But it is a good bacteria

      اگر از راسته گوساله و یا گوشت مغز رون گوسفند اتفاده کنی بهترین هست
      راسته گوساله=beef ribeye

      Yogurt juice it's basically water in the yogurt.
      Just buy a cheesecloth and place the yogurt in the cloth, hang it over night and let the water drain in a bowl.
      You must not squeezed the yogurt in the cheesecloth, and does not need to be placed in the fridge.
