After you destroy the first steam pipe obstacle to get the the elevator if you go right instead of left you'll find a chemistry table with a vial on it labeled copperhead poison, which is a reference to one of the assassins in Arkham origins name copperhead who poisons you in the story.
Easiest way to get chunks of flesh is to use a weapon that fully destroyed the zombies body. A pack a punch legendary weapon or Epic weapon. Or a lvl 3 pack a punch rare weapon.
