The American Truck Simulator is almost certainly a reference to Cars. In the movie the owner of the tire shop is named Luigi, so if you just pair that up with the in game store being run by Mario then it makes it even more likely to be a reference.

Here's a Easter egg that I haven't seen anyone acknowledge in batman Arkham Knight when you are in ace chemicals. After you destroy the first steam pipe obstacle to get the the elevator if you go right instead of left you'll find a chemistry table with a vial on it labeled copperhead poison, which is a reference to one of the assassins in Arkham origins name copperhead who poisons you in the story.
Easiest way to get chunks of flesh is to use a weapon that fully destroyed the zombies body. A pack a punch legendary weapon or Epic weapon. Or a lvl 3 pack a punch rare weapon.
