the best white sauce is just mayo + water to loosen it. every classic nyc halal cart does this. specifically, you need "Admiration" brand heavy duty mayo with the black label, and a little water to loosen it to a sauce consistency. you may think im joking but im not, this brand of mayo is one of the food industries' best kept secrets because of its superior and patented flavor profile and texture. no other brand comes close, you cant make white sauce with Hellman's or Duke's. halal carts buy this brand by the buckets and so do burger restaurants. the smallest size container of Admiration you can buy is a gallon from restaurant supply stores, but it wont go bad by the time you finish all of it, mayo is acidic and the water content is emulsified in fat so its extremely hard for bacteria to grow, just keep it refrigerated to keep the mayo from separating.
What I’ve learned add a little Sazon and let it sit in fridge all of ur other infrequent for 30 min. What that does is thicken it so not so watery but great job
