PAIN DE GÊNES - roasted almond cake. Very easy and light. Can be made gluten free flour too!

    Pain de Gênes
    150g almond powder
    150g caster sugar
    4 eggs
    95g unsalted butter (plus a bit more for your tin)
    25gr corn starch
    25gr plain unbleached flour
    30gr almond flakes
    Preheat your oven @150
    Toast your almond powder for 10min on a baking tray
    Increase your oven to @170
    In a small pot melt the butter on low heat
    Generously butter the cake tin (24cm)
    Sprinkle the almond flakes
    In your mixing bowl with a whisk
    Combine roasted almond flour, sugar & 1 egg
    Whisk until combined then add the 3 other eggs during a time of 10min
    The batter must look pale and grows in volumes
    Sift corn starch & flour over and fold them in the batter with a spatula. Delicately
    Take out a couple of spoons of the mix and add it to the melted butter. Whisk until homogeneous.
    Add this to the main batter and fold again.
    Empty the contents into the tin and bake for 30min
    Let cool down for 15min
    Go around with a sharp knife then flip over onto a plate.
    Serve as it is or dust some icing sugar.
    Voilà!
