Succulent and Tasty Mock Duck Biriyani

    This is a tasty Vegan Biriyani made with Mock Duck. You could make the Mock Duck from scratch however you could save time and buy it in the supermarket, you could also use other alternatives.
    The Mock Duck is made from Glutein, which is often extracted from Wheat. As a vegan I use glutein as a protein replacement in some meals, thus it forms some part of my vegan diet.
    Ingredients :
    - Choice of Vegetables - I use 4 Carrots and 3 Potatoes
    - 2 Cups of Basmati Rice
    - 1 Can of Mock Duck (280gm)
    - 3 Tbs Coconut Oil
    - 1 Red Onion
    - 1 Bunch of Coriander
    - 3-5 Cloves of Garlic
    - 1 Tbs Ginger Paste
    - Spices : 1 Tbs Pilau Masala, 1 Tbs Biriyani Spice
    - Vegetable Bouillon to make a 3 cups of stock or use 3 Cups of Boiled Water
    Method :
    - Peel the Carrots and the Potatoes
    - Then slice the carrots and chop the potatoes into cubes
    - Wash the coriander and then slice it
    - Wash the the Basmati Rice
    - In a pan melt 3 Tbs of Coconut Oil
    - Add the chopped red onion and sauté until brown, then add the garlic
    - Add 1 Tbs of Ginger Paste
    - Stir the the onion together with the mixture, then add the Carrots and then the Potatoes
    - Add the Biryani Spices then Chopped Coriander on top of the Potatoes and Stir
    - The add the Mock Duck that has been cut into smaller pieces
    - Add the Basmati Rice and turn using a wooden spoon
    - Finally add the Boiled Water or Vegetable Stock
    - Keep Stirring for about 3 minutes
    - Cover with the a lid and let it cook for 25 minutes
    - When ready serve while hot !
    - Enjoy
