Ep 29: Fondant Potatoes

  • Fondant Potatoes are a really lovely way to prepare them. And when they’re finished you’ll have these wonderfully flavorful potatoes with a crispy outside, and a delicious soft and fluffy interior.
    For the ingredients I have:
    4 russet potatoes
    2 tbsps of vegetable oil
    4 tbsps of butter
    Some sprigs of thyme
    4 cloves of garlic
    Salt and Pepper
    1 ½ cups of chicken or vegetable stock

    You never fail to please. Never seen such good looking fondant potatoes.
    One of the things I love about your oven is the smooth transition as you move things in and out. Even your Tuscan grill doesn’t get caught up on the space between the tile and the oven floor. Smart design that as you pull stuff out, everything slides easily and all on one level.

    If your videos were grainy and out of focus I'd still watch them because the content is so valuable and you exude the calm confidence to which every wood oven chef aspires.
    Instead, the production quality is so outstanding as to render each episode pure gold. From the wonderful score and crackling fire at the intro through the final beauty shot at the end, and every great camera angle in between, your videos never cease to be compelling, informative, and entertaining.

    I am New to your channel and it is really inspiring to a point I am getting my own wood fire oven for my garden soon. I Love cooking as well and this primitive way of cooking has always been my passion. All the Spanish paellas 🥘 I cook are wood fire 🔥 always, there is no other way.

      So did I many years ago. I bought the refractory concrete shell for my Alps house in Italy and layered it. Alfa no longer makes refractory shells: only steel. Hard to believe.

    Doesn't your wine get warm being that close to the oven mouth? Or is it gone before it has a chance to heat up?

    You sir are an artist! An artist with your food as well as your video productions. I feel like I should grab a glass of wine to watch each of these with. ;-) I was surprised at how long they still took to cook given the temp of the oven (total elapsed time 1 hour? at 650 degrees).
