Just read a book on the history of Byzantium by a secular historian. It was eye opening. It explained a lot about Orthodox Christian theology without getting into theology.

That's a bad argument. Because the modern liturgies of Sui Iuris Churches are different than what it was before but we still identify them as different liturgical rites.
Likewise, while the liturgy of Latin Church has changed, the essential distinctions and most importantly, it tracing its origin back to the Church of Rome justifies identifying "Roman Catholic" as the Roman liturgical Church. There's no contradiction. All the liturgical changes evolved within the same tradition. There is enough of a difference between the Alexandrian, Antiochean, Byzantine , East Syriac, and West Syriac traditions to call them all independent traditions and Churches. Likewise, while there is diversity, the Western Church can still be uniformly called "Roman Church".
So no, the term "Roman Catholic" doesn't make sense in a liturgical sense.
Yes, the Catholic Church is "Roman" as in the Pope is the Bishop of Rome, but it is also not universally "Roman" since not all Churches follow the Roman liturgical tradition.
The Church also make distinction between the Roman Church and Eastern Chuches numerous times.

Well, Byzantium is also Rome, the New Rome of Constantine the Great
@@holyromanemperor420They consider themselves Roman as much as any local identity. However in regards to Romaness as the Medieval Church understood, the HRE was truly the Roman Empire.
