Instead of having wine pairing this is what restaurants with tasting menus should have. If you go for wine pairing you just get drunk and too full to enjoy any food. Besides after a few glasses you can't taste anything. Also it's just wine. It has nothing to do with the chef. Instead there should be one single tasting menu and different drinks should be created by the chefs. Then you can serve one beverage/juice/cocktail whatever to accompany 2-3 courses.
