  • cant beat a vanilla slice made with real homemade custard. makes 6 huge slices. recipe written below.
    pre heat oven 180 degrees c
    2 baking trays and 2 sheets baking paper
    2 sheets frozen puff pastry thawed
    bake each sheet for 20 to 25 mins depending on your oven
    square cake tin lined with baking paper
    cut first cooked sheet to size and put in tin
    cut second sheet to slice sizes which is optional and set aside
    in a mug
    1/2 cup water
    1/3 cup corn flour
    mix well set aside
    we need 6 egg yolks whisked and set aside
    in a med saucepan
    60g butter chopped
    1 and 1/2 cups milk
    1 and 1/2 cups cream
    4 tea sp vanilla extract
    2/3 cup caster sugar
    put on stove top on med heat bring to boil as soon as it starts boiling
    take off
    add the corn flour mix and egg yolks mix well
    return to heat bring to boil always mixing.
    mix well for 1 minute til thickened
    pour over pastry
    layer 2nd sheet pastry on top
    stand 20 mins
    then fridge for 4 hours uncovered
    heat proof bowl
    2 and 1/2 cups icing sugar
    1 tea sp vanilla extract
    2 table spoons soft butter or marg
    2 table sp milk
    mix well
    sit over saucepan kettle water til runny
    spread thin layer over top
    sprinkle with dessicated coconut
    fridge 1 hour uncovered
    slice and eat
    store in airtight container in fridge for couple days

    Most sweets are good, but vanilla slice is absolutely the queen of desserts for me.
    Your recipe looks better than what I have been doing, so that is definitely happening this week.

    Hi, Love you and your recipes. I’m the lady who asked you for the pikelet recipe. Thanks so much, my Mum was thrilled to have her Mum’s recipe again. Just a little trick for cutting your cooked pastry into equal 6 pieces. Make a grid on a piece of baking paper or the blue pastry plastic sheet and just measure out and draw up your 6 rectangles and then lie it on top and make your cuts. You should be able to make an indent with the pressure of the knife first , remove the paper and cut away. Save the grid until next time if you can. I know this was done months ago but you can still use the idea next time if you need to. Thanks again. One day I will catch up all your great videos. Much love and heaps of hugs. ❤️🌻❤️

    Your a bloody marvel love. It looks great, and yeah the icing does look at little thick. I really like the idea of cutting the pastry first. It's good to see an Aussie doing this. Some of the ppl I watch have kitchens who cost more than our house. Keep up the good work.

    This is an awesome recipe, it sets well. I cooled my custard in the fridge in a bowl first, because mine looked a bit thinner. I liked the honesty of using less icing. Delicious and well done!!! Thank you

      😂🤣😂 that is not un Australian at all mate. there were two distinctive vanilla slices when i was growing up. this one and one made from custard powder with passion fruit icing on top. i will make it down the track. have a lovely night Tiger xo

    Thanks, I will make it very soon. A suggestion, cut the puff pastry to size from the bottom of your square pan, maybe it will save you having to cut it again. Have a good day from Quebec, Canada.

    Don't forget a Pinch of salt in the custard and in the frosting. It helps cut the excess sweetness.
