CARROT TART | You MUST Make this for Easter!!!

- This carrot tart is not only a work of art but is super delicious! You get the flaky puff pastry, the tangy cheese and the sweetness of the carrots. All together it makes a symphony of flavors in your mouth!
Your Family and Friends are going to be super impressed if you make this tart!!
Ingredients:
3/4 lb or about 7-8 medium to large carrots
2 T EVOO
1/4 t salt
1/4t pepper
1 Sheet of thawed puff pastry
1 package of Boursin Cheese or 4 oz of soft goat cheese and 4oz soft cream cheese
3/4 C shredded Monterey Jack or Mozzarella cheese
1-2 T Fresh chopped dill
2 T melted honey

Karen, this carrot tart sounds really, really good. I have never experimented with exotic carrots before. Now, I want to bring to your attention that I made another one of your delicious recipes, the Vegetable Beef & Barley, a soup I am partial to. Boy, was that a good one. It is a hearty, flavorful comfort food soup. Glad I have this recipe. Anyone who likes these ingredients should try your recipe out.

This looks so pretty! We grew the carrot mix a couple years ago but the garden hasn’t been great the last two years. I’ve never seen them in the store. Maybe Whole Foods has them so will check when I plan on going that direction.
