Heat tends to fade out the taste and aroma of leaves, and to make them bitter. If you add them in the end, you get more flavor and aroma, and less bitterness . This one dish you can use soy, because the depth of flavor from soy adds to the deep umame flavor of Calderetta. Instead of salt, use soy or fish sauce, they add saltiness plus flavour. Congratulations now you can cook Calderetta without using ready-mix... you know how to get the flavor by making it yourself . Fun fact: If you substitute beef, tomato sauce and liver spread....with chicken , coconut milk and curry...you will get Filipino curry.
Val, Your CALDERETA need tomato sauce 🥫 and no need to stir fry all the vegetables(minus cooking oil) just add potatoes, carrots and green peas when the beef is cooked and tender together with the tomato sauce and add tomato paste if it’s watery.
