This video shows you how to prepare the chicken, fragrant rice and chilli sauce using secrets that Anne learnt from Hainanese chicken rice sellers decades ago. Ingredients:
CHICKEN:
1 Whole Chicken 2kg (including head & feet)
2 slices Ginger (to insert into chicken cavity)
1 bunch Spring Onions (to garnish chicken)
2 tsp Salt (add into pot of boiling water)
1 tsp Salt (to rub all over chicken just before carving)
FRAGRANT RICE:
Rice 850g (6 rice cooker cups; Use rice such as Jasmine or Thai Hom Mali)
4 inches Ginger
12 cloves Garlic
3 Pandan leaves
Fat pads from back of Chicken
1 tbsp Vegetable oil (if required)
1.2L Chicken broth (7 rice cooker cups)
CHILLI SAUCE :
6 Chillies, large
2 Chilli padi
2 inches Ginger
3 cloves Garlic
4 Calamansi - juiced (add a little White Vinegar if you prefer a more sour chilli sauce)
Rind of half a calamansi
1/2 tsp Salt (adjust to taste)
4 tsp Sugar (adjust to taste)
Skimmed oil and a little broth (from cooking the chicken) - Навчання та стиль

This steamer is so wonderful that I bought one for each of my children from TANGS in Singapore, more than 10 years ago!😄. Unfortunately I cannot find it anymore in the stores. The brand is U-Like, a Taiwanese brand (this particular steamer is made in Japan). Perhaps you can try looking for it online. Let me know if you find it!
