    Excellent recipe. So layered. So many applications (toasting the cashews, the dressing, the curry leaf oil) to apply to other dishes. I would love to try to make and eat this!

    The slaw looks so v delicious! I wish you would have showed how you got the carrots so finely julienned. Maybe next time. And I love that you didn’t make the dressing sweet but used the fresh lime juice. Looks beautiful. A tasty feast! Thank you

      Hi Paula, Yotam used the mandoline's julienne blade. Makes it super easy (just watch your fingers or even better, use the guard). Glad you enjoyed it! :)

    I miss Yotam Ottolenghi as a soloist, though he’s a great launchpad for his recent sidekicks who benefit from association with him.
    See Turkish home chef Refika re a cabbage recipe today, which, as it was presented or adapted further could help reverse some “underlying conditions” and “”comorbidities”, as many cabbage recipes might. Her traditional Turkish recipes are a standout amongst many, as well as her heartwarming instruction.
    Hope those who enjoy Refika’s Kitchen might enjoy years of Yotam Ottolenghi books.

    This is basically the Vietnamese cabbage, carrot, and chicken salad (goi ga)...but with an Indian spin.

    After the curry leaves have been in the hot oil and added to the slaw, are they edible? Or are they like bay leaves, where you remove them (and don’t eat them)?

    Looks yummy. Dijon mustard isn’t ( or usually isn’t) vegan though. So some people may need to substitute.

      @@joeyodonnell123 Depends on the filtering process of the wine (or verjus) used to prepare the mustard. Some wines are filtered with animal-derived products like isinglass, gelatin, or casein.

      @@joeyodonnell123 my understanding is the filtering process in making the verjuice uses non-vegan products. So some people may be fine with it but others may not. If the mustard uses White wine as an ingredient the wine may be filtered using similar ingredients.
      That’s what caught my eye to begin with as I only recently learned that many wines are not considered vegan. Most wines use casein to clarify them. And because Dijon mustard uses wine as an ingredient I wanted to learn more.
      So the ingredients are not animal products but the process to make the ingredients uses animal products. It’s a distinction some people may care about and want to find substitutions for.
      I am not vegan myself but my best friend is and we like to share recipes, so I try to keep myself informed.
      I had to go dairy free for a year due to my daughter’s allergy and realized soooo many things use or include dairy!
