Con carne is Spanish for with meat. Chili con carne is a Mexican dish that was made in Texas when Texas was part of Mexico.
Its actually even older than that. The original recipe for what we call chili today came from the Aztecs, who would slow simmer game meat with tomatoes, chili peppers and a few other spices. It was a recipe adopted by many of the Central American and Southwest American tribes of natives. It was later adopted by European settlers and the main meat was changed to beef since it was a staple on cattle drives. Chili peppers have a high nutritional value, especially vitamin C, as well a being easy to store and transport, which made them ideal for long cattle drives. This is when beans in chili probably started to catch on as well, since beans were also a staple of the cattle drives.

Here in Arizona, it's Pinto Beans or Black Beans for everything! We use Pinto Beans in our Chili, Kidney Beans are to strong tasting that's all you taste eating chili with kidney beans in it!
carne is meat, carne molida (ground beef) carne bistec (steak) spanish for beans is frijoles usually said with type of bean, frijoles pinto, frijoles roja, ... blanco , queso is cheese but you guys probably figured that all out without my help. keep the good vids coming and be sure to try some of these recipes

Cowboy Kent Rollins has a cookbook available. I bought it and everything I've cooked from it was outstanding.
Carne = meat frijoles = beans I use either ground beef or stew meat. But the best chili I ever had was made with deer meat. If you count the number of people that cook chili - that's how many different recipes you'll find. I've also cooked chili with and without beans. My preference is fresh cooked pinto beans - if I use beans. But I usually prefer without beans.
I’ve only ever made my chili with ground beef but I always change up what kind of beans I put in. Sour cream and shredded cheese for toppings!
Kent was my late brothers favorite you tube channel. I add diced carrots and sweet fresh corn straight form the cob.
I've been slowly prepping a package to send to you guys with some of the things we get in So Cal that you probably can't get over there (especially elsewhere in the States). Tex-Mex in Texas is different than Tex-Mex in California in some respects (many, actually). For example, chili is usually something you normally don't find on a Mexican restaurant's menu here and "chili con carne" to us sounds very Americanized and almost old school. In Texas, I'm sure it's common. In California, you're much more likely to find nopal (cactus), octopus (pulpo), fish tacos, etc. I also found that our refried beans are usually much drier than those in Texas (which seem to be more runny). I could be wrong about all of this and sure I'll have people correcting me. Just the addition of cayenne pepper is a clear indication that that style of Mexican food is probably from Texas.

Supposedly eating soup (hot) in the summer cools ya down. Moose meat like in burgers is SO tasty…better than cow/steer! With cast iron, you also get a dose of iron for the blood. Also, corn bread is perfect with chili! Goodonya folks!

In the Midwest we have Runza's and in the winter, a meal can be chili with a cinnamon roll. Don't knock it till you try it.

I make mine with ground beef too. Chili is one of the few leftovers I always look forward to. My grandpa made his with deer. I don’t have his recipe but that was the best I’ve had.
Deer is really underrated for just about any kind of dish. Mixed beef and deer chili is maybe some of the best chili I've ever had. Need to ask my uncle for his recipe.
Deer is a great meat. Midwest and Southern US really exposes how good white-tailed deer is.
Elk is even better, if you're lucky enough to get any.
I used to go on elk hunting trips to Colorado as a teen. Everyone I know who was lucky enough to try some loves elk a lot more.
deer jerky is crazy good! lol my friends who hunt like to use half beef and half deer for chilli, i unfortunately haven't had a chance to try it edit real quick, have to have chilli with cinnamon rolls!
Lesser known but still very good are green chili made with pork and white chili made with chicken.

In Old and and parts of New Mexico, if you say chili, they think you are talking about chili peppers. Chilli con Carne is the authentic name for the dish Kent is making. Chili is just a shorthand way of saying it in most of the United States. There is an outdated belief that northerners put beans in their chili while southerners left them out. That line has been blurred a long time ago. It really just depends on preference.
My favorite recipe of Kent’s! Used this with some slight changes and won our office cook off. Love making it still.
I like to use ground chuck, and some tri-tip when I make chili.
short rib and chuck for me. Or strictly chuck with frozen beef fat that I keep because I'm anal like that lmao. :s I'm gonna have to try tri tip though since I used to live in Cali and that's a huge staple there. (we used to love tri tip and tenderloin, no idea how it started)
Had bear chili once when I was a kid at my friend's house. It was really good!

Deer meat imo is 2nd out of all meat behind cow. But also bear meat is amazing if you get someone who knows how to cook it right and if you get the right bear meat. Lastly the beans no beans conversation is one argument if we take it too far can start a civil war. So let’s leave it to personal choice

The way I grew with this dish is Chili con Carne is Chile with meat, sometimes when we didn't have enough chopped up meat to make a proper chili, we would sometimes add beans to stretch it out a bit, kidney beans are what we use when times get tough like that. Either way It still tastes good.

Con carne is really both Spanish and Italian but chili is Spanish (Latin American).
I'm not sure Brit's understand that most American houses in the south have AirCon (almost a necessity) and no matter how hot it is chili is still a thing.
I love to have my chili over white rice.
Add some beans if you’re poor. Make a batch of corn bread w butter. Add some sharp cheddar cheese and green onions? Yummo! All is good 😊

Deer is good. Elk is even better.
I hunt deer, and I used to hunt elk in Colorado when I was a teen. Everybody that I know who has gotten to try elk says they love it more than deer.

I workout side so my eating changes from hot to cold weather. When it’s hot cold sandwich’s and chips is all I eat.

FYI You shouldn't cook tomato acidic heavy dishes in a cast iron as it will eat away at the metallic coating over time. Most people don't super season their cast iron pans over the length of at least a day so it's not recommended. Dutch ovens are a different story as most of them come pre-seasoned and are meant for long period (they were originally meant to be put directly over a fire lol). Just feel like Kent barely touched on that this ep.
Kidney beans for in chili for me, pinto for making my own refried. Sometimes I'll grind my own meat and/or buy preground and sometimes I'll just freeze and cube it to 1x1 cm cuts. Honestly, the lazy man's way is my fav because it's simple somehow that makes it taste better. Cheese, sour cream, green onions.. all I need.

bison works fine for chili. if you want more fat you can sweat the onions and peppers in a bit of oil before adding the meat

I don't like beans, so I never add them to my chili! Mine is meat and spices, maybe a little onion, but not much else. I've never gotten any complaints, just an empty pot after we've eaten! 😊 Chili and cornbread, the best!
I love Kent, but my Chili is 10x better than that. Not adding any actual fresh peppers to a chili is criminal to me.

Dunno if it’s a culture/ race thing ( I’m black) but I have NEVER eaten chili without rice . Like it’s chili WITH rice. It’s not chili if there’s no rice with it. WHERE IS THE RICE
I’m black & from Texas and we just eat chili in a bowl (no rice). You can eat it with rice but I never do.
I think it's not so much race but location wise. Chili with rice, pasta, eggs, bread, hell - most things is good lol. I mean, you have to have heard of "chili mac".
@@Timmycoo yeah love chili mac. Chili dogs, chili cheese fries/tots, Frito pies… I like chili on an omelette… I like chili on a lot of things, but if I’m making a pot of chili, it’s usually just to eat in a bowl on a cool day in the fall or winter.
@@lwilliamsj7 Lol one thing I love about chili is that you can freeze it for leftovers. But yeah, on a cold day it definitely helps. I dunno about chili dogs or frito pie. (Feel like I can eat a chili dog in ~1 min) lmao But chili mac would be great when it's raining out.
