A "smash" burger is flattened before it starts to cook, so you're not squeezing out the juices. If you're cooking a thicker patty, you shouldn't press it once it's been cooking, otherwise you're going to push out all the rendered fats and juices from the patty.
Smash burgers are cooked on a flat top grill not a grill with an open flame or coals😂❤😂
Smash burgers taste nice, but many folks smash them too thin for my liking

Kent is a gem. In my youth many years ago, I worked all over the Western states (Montana, Wyoming, Idaho, Utah, Colorado, North and South Dakota, Nevada etc.) in the oil exploration business, and I've met many a gentlemen cowboys just like Ken. They are the best human beings you could ever meet.
I was fortunate enough to meet Kent and Shannon Rollins at Silver Dollar City in Branson, Missouri a couple of years back. They are as real and as nice in person as they are on their channel.

"smash burgers" are different because they're done on a flat iron grill so the burgers stay with the juices. Smashing on a regular grill just loses all of the juices into the fire/coals.
I have a "cheat-meal" once a week....and a home-made Big Mac is always in the running. I literally just made biscuits & gravy and I'm going to bed shortly. 😃

I agree with Daz. I make big burgers like Kent .toppings, all though tasty, usually turns into a big mess. Minimal is the way I prefer it. It’s totally satisfying. Mayo or something is all that’s needed. A slice of onion and your favorite cheese completes it all.

It's funny, my whole life myself and friends and family have gone to McDonald's like hundreds of millions of others but even though the big Mac became famous decades ago I can't remember more than a couple of times over 35 years that myself someone I know or was with even ordered a big Mac. I remember having one years ago thinking it sucked. Everybody either orders cheeseburgers double cheeseburgers or quarter pounders when they want a burger.
same here I also find the lettuce to be quite pointless because it's iceberg lettuce which has little to no nutrients in it.
You are weird then, Big Macs are bought a lot.
I've been trying to tackle the Bob's Big Boy burger, which is similar in many ways. In fact, I think the Big Mac and the Whopper and so many others were based on the Big Boy. Did they have Bob's Big Boy in the UK? I've always wondered. That was my first job when I was 16 in 1987 (waiting tables at Bob's). I've learned a LOT about the history of this icon. I remember it having a red relish but I'm in CA. I found out other portions of the country use 1000 Island or even tartar sauce! The few Bob's franchises that still survive have been allowed to go with whatever sauce they prefer. I'm still surprised that a company so well-known and unique, just disappeared almost overnight. This is off the mark, but if you guys like cooking videos and love Italian food, you've got to look at Osara's channel. Everything I've made from his recipes comes out outstanding. I'm usually lukewarm about my own cooking but I'm actually shocked at myself when I follow him. He's a fantastic, animated guy (like Kent) who blew up here in the States at the start of the pandemic. They even featured him on national news channels a little while ago.
Mcdonald's secret sauce is literally just thousand island dressing.

Great video. McDonald's has made a slight mistake with the Big Mac, the McDonald's Quarter Pounder burger is thicker. Use that thicker burger in the Big Mac. 😊

That's too thick for me. You have to go with thin patties IMO if you're gonna do a double burger.
HA, I'm old enough to remember our family pulling into the McDonalds and huge Golden Arches and my Dad saying - we are going to eat like birds . . cheap cheap! LOL That was his favorite line . . they didn't have "kids meals" then - but I remember the McDonald guy holding the $.15 for a hamburger!! Can you believe it! That was just the hamburger with mustard, ketchup - we got fancy and would get cheese! LOL
You know what's funny - most Americans really don't use ketchup on their burgers, unless it's with mayo and mustard -- most just use Mayo, or a special sauce or just mustard . . we use the ketchup more for the fries -- now most kids want ketchup on their burgers for sure....but percentage wise - most of us save the ketchup for the fries...although I will put ketchup on a hot dog if I putting everything on it meaning ketchup, mustard, relish and onions . . . but that's different! LOL
lmao that's a big claim about the ketchup, everyone I know uses either only ketchup or both ketchup and mustard on their burgers as for mayo I've yet to see someone put it on a homemade burger.
No ketchup for me on my burger or my hot dog, regardless. No one I know puts ketchup on their burger unless it's fast food and it's already on there, or they're a child..

The Big Mac DOES NOT have gerkins in it. That would be very weird. It has slices of pickles that are "Hamburger Slices" or "Hamburger Chips" depending on brand. Gerkins are only the small whole pickles that are pickled in a sweet brine.
Why was he doing all that crap to make the "special sauce" when you can go to the store and get a bottle of Thousand Island Salad dressing which is exactly what the "special sauce" is.
And thousand island dressing is nothing but ketchup, mayo and pickle relish.
I find it funny how everyone complains about the size, freshness and amount of fast food.
For McDonald's to sell these types of Big Mac's, they'd have to up the price by 3x from about $3.75 to $12. McDonald's makes 1,000x the profits that Five Guys makes per year. People doesn't seem to understand that you get what you pay for.

to Office bloke (Daz) and (Gaynor) "McDonald's in the US" Does not use the same ingredients as the UK. From experience the US McDonald's taste alot better and has better quality.
& It's the same with alot of other American fast food chains that the british bring to the UK.
American fast food just taste alot better.
So even though they take the same names and sort of the same look of American fast food meals. your really not getting the Same food or taste. 👍🧠

Daz isn’t going to like this but…. I don’t like Big Macs I only get cheeseburgers or nuggets when I go to McDonald’s!
Well, first off. I see that this video is one month old and regarding your comments. Section, I'm not sure once you get past the 1st day or so as to whether you still read comments weeks after but I'm gonna take a shot at it. But the idea that maybe you do read comments later.
The biggest take away that I have regarding this video is the intent of giving you bigger thicker burgers. Now I have no.
Thing against burgers at any thickness and depending on the type of burger. I might even make a 1/2 pound burger or a quarter. Pound burger depending. But there's one rule of thumb that I always go by and it works well and that is when I'm going to make a knock off of a specific burger that I have found that I love from some hamburger joint than what I do is I try to repeat it exactly as I buy it and love it at the restaurant. So what I'm saying to you. Is that making those burgers bigger and thicker? Does not work when you're trying to make a knock off. Why does the big Mac's taste so good? Well, it's the way they make it. They use 2 patties. And they're thin and for whatever reason that works better than trying to make a big Mac with sticker meat. Because meat is not the star of a big Mac, it is their sauce. To verify what I'm saying, I was interested and made the big Mac at home using a thicker burger. And I'm here to tell you. It still tasted good, but it did not taste like a big Mac. It just tasted like a good burger sandwich. And I didn't get the flavor profile that I wanted because the meat was the overwhelming flavor. Anyway, I guess it doesn't really matter. But I hope that you read comments on some of your videos weeks after you've aired them.
I don't know why, but Angus beef makes me throw up every time. I have to work hard to avoid it because everybody thinks it's so great.
