I would need to see Sheldon repeat this experiment with at least 50 more subjects. Preferably subjects with the same gender, age, and attractiveness to reduce outside variables.

Once the cast got filled up, it felt like the writers were given the duty of having to fit them all in virtually every episodes, which meant a lot fewer episodes with just the boys themselves.

I actually agree with this. Sheldon was initially attracted to Amy’s mind and her superior intelligence, which matched his. That way the show feel way more balanced, also she was there mostly as a romantic partner for Leonard, and as things got better with Penny and Priya did Leslie for some time, she was not necessary.

something i never see get mention and i’ve decided i’m just going to mention it here ,, i wish sheldon and penny would’ve ended up together. they’re so opposite of each other yet they became really good friends and i can’t help but feel like it would’ve been a really interesting relationship and a plot twist and also really cute.

I mean I get it, I love their relationship too, but I think I like them being brother/sister (or Elliot/E.T. as Leonard put it) more... There aren't a lot of good and enjoyable platonic M/F friendships.
Also, regarding the mentioning factor, like a good 70% of all BBT media material is Shenny, so knock yourself out if you want more of that.
