    Granola bars are the perfect mid-morning or afternoon snack.
    These copycat KIND bars pack a ton of flavor and a lot of interesting textures - snappiness on the top, chewiness on the bottom, and a lot of crunch in between. They are a cross between a granola bar and a candy bar.
    These KIND bars (candy bars) are almond-coconut, but I have also tried dark chocolate-nuts, chocolate-cherry, and peanut butter.

    I was really hoping to post a video with a taste test today, but unfortunately, something happened to the audio. The microphones must have not been plugged in correctly because there was a lot of buzzing and hissing in the audio. Oh well! Tanner and I will record the taste test again, but in the meantime, here is a video for candy bars 😊

      I wish there was an easy way. I just manually chop the nuts. It is just 1 cup, so it doesn't take that long :) You could probably also coarsely chop the almonds in a food processor.

    What is maple syrup made of. Can we use homemade jaggery syrup or chocolate syrup instead of maple syrup?

    I love maple syrup but it has a higher glycaemic index than sugar! You can mix half and half maple syrup and brown rice syrup. You still get the lovely maple flavour, but the benefits of the lower glycaemic index brown rice syrup.

      Thank you for the feedback. I have tried a few recipes with brown rice syrup and it does work particularly well in granola bars and candy bars because it is so sticky. I am yet to try it with this recipe. If you beat me to it, please, let me know how it goes :)

    Oh my goodness! My hubby is going to LOVE this! Petra, what other ingredient swaps could I do. I imagine any other nuts could be used(?) what about adding sesame seeds?

      Yes, for sure. I talk about swaps on my blog (nutritionrefined.com/granola-bars/) but essentially any nuts/seeds/dried fruit should work. You can also dip the bars in chocolate :) The only ingredients I would be careful with are gelatinous seeds - flax seeds and chia seeds - as they behave differently than other seeds.

      Aw, thank you Anna! I have never tried this recipe with agave, so I am not sure. It might work, but you would likely need to adjust the amount of agave you use and the baking time.

      Literally any high sugar syrup should work.

      I have never tried this recipe with agave, to be honest. I am pretty sure that honey or even brown rice syrup would work as they are very sticky. But with any changes, you might need to adjust the amount of sweetener you use and the baking time.
