Fast drying compound has come a long way. You can get something like Easy Sand 20 and have this patch knocked out in a few hours, no overnight waiting and sanding next day. Of course for a homeowner who isn't in a rush, premixed AP like shown here may be the way to go. No need to mix and no worry about working time.
The texture comes from the paint roller just like on the original wall. The sheetrock was smooth to begin with so the only difference is the paint roller. If you use a paint brush then you wouldn't have texture and it would stick out like a sore thumb.
