Fun fact: What he's saying (at least in Mandarin, which I can't be sure isn't actually a dub over a Cantonese filming) translates more literally to, "Speak only once we're safe", so he's basically telling Liang to stop being cocky about their chances.
I'm soon going to be a Wing Chun teacher myself, and what I've seen often enough is that at some point, when minor achievements slowly start trickling in, people tend to get cocky. Though I'm sure students of other martial arts show that as well. Since we focus a lot on how to deal with street fighters, we try to make them remember that more often than not it's just about damage reduction, and not about leaving completely unscathed. It's very important to know the limits of one's abilities, and when it's better to run (which, is almost always a knife is included. Ain't gonna deal with that shit even though I know how to [or maybe because I do and know how difficult it is], it's just not worth the risk).

When I started learning it a long time ago larning how to fight on the ground was considered to be unnecessary because "we never go down". That is unrealistic and highly dangerous. In street fights it's not u likely that once you are down the rest chimes in, and kicks to the head are naturally deadly. Same when someone comes and wants to learn it, our first priority is to get them ready to stand up and defend themselves against what you common encounter on the streets, and how to identify and avoid those situations. While this too tries to follow the same principles, the entire part that one would call interior Wing Chun follows as one progresses. In general we try not to let tradition stop us from creating a better and more applicable martial art. There are already plenty of schools that teach it for the teaching's sake.
Yes, this actual choreography scene takes 3 sec, between previous and next camera cut. It was made for this kick only. So Donny and his colleague just needed to remember were their legs will be in next few sec. Not that amazing :) But if we forget it: yes, stunning.
When you realize that every single strike ip man did with the knives was probably a direct kill means that if he actually wanted to kill all of them, he could. Even by going on easy on his foes, he was able to survive the fight.

Ip Man is a good person. He only fights when he has to and doesn't boast or use them as a use of 'arguing.' He tries to not fight, knowing that a brawl will lead to instant drama and violence, but has no choice but to fight to protect his student and himself!

If you can master it well (that’s why you were called master), you don’t need to learn those what you had mentioned. Of course, live & learn is good to everybody. It’s good to everyone who knows more.
Ya know what I love about this scene at the end even though Jin lost to Ip Man twice Ip man knows full well seeing Jin that Jin is more of threat to him then a small army of armed students hence him turning his knives on Jin and not the boys behind him.
