Bún Chả - Vietnamese grilled pork meatballs with vermicelli noodles

Vietnamese Meatballs
1 pound ground pork (at least 20% fat)
1/2 shallot, finely minced
3 garlic cloves, finely minced
1 1/2 Tbsp fish sauce
1 Tbsp oyster sauce
1 1/2 Tbsp honey
1 Tbsp brown sugar
1/2 tsp ground black pepper
1/4 tsp baking soda
optional: 2 Tbsp lemongrass, finely chopped
Pickled Vegetables
1-2 carrots
1 kohlrabi
1/2 tsp salt
1 Tbsp sugar
1/2 cup distilled white vinegar
(Nước Chấm) Dipping Fish Sauce
1 cup hot water
1/4 cup sugar
1/4 cup fish sauce
1 lime
1 garlic, finely minced (optional)
1 Thai chili (optional)
** Adjust the amount of fish sauce, lime and sugar to your preference
