Yummy! I made these exactly the same, I did add a tiny bit of dry sherry to the creamy sauce and some parsley, they were wonderful. Always wondered how they made these. They were popular when I was kid in 60's. Great video!

My favorite croquette is salmon, these look good too, never made chicken before.I think I would add chicken powder or crumbled chicken cube to the roux mixture.
looks awesome... can make this vegetarian by using 3 packages of whole foods "Chicken Seatan" that you chop finely in a food processor. You think this was really meat.
when I went to the diner today I ordered this so delicious, now thanks to you I know how to make them. When I got them though they gave me two big ones..can you just put a big ball of the filling like they did and fry it? thanks u!

It is a fairly good recipe. Thanks for divulguing. But if you want a really Spanish result, you might want to change a few things: add abundant ground nutmeg to the bechamel sauce, the parsley to the crumbs instead. Less onion: that much is for a full tray of croquettes--6 is not enough!. Make croquettes half the length. Use abundant, very hot olive oil (reusable 12-15 times if filtered). Turn the croquettes over just once or twice. Important: don't mind fingers when eating! And no onion for me!

@@CookingWithDiana my mom work in a fine restaurant. She learned to prepare many dishes. When she made chicken croquettes she would make a white sauce kinda like a bechamel sauce. And lightly pour over croquettes. Search YT you’ll see a recipe for it. Some people make with and some without. I prefer with myself. Matter of what your use to I guess.
