  • Quick lunch recipe, frittata with bell peppers an easy lunch yet so delicious and healthy. A ready in 20 minutes meal.
    QUICK LUNCH
    5 EGGS
    3 MEDIUM MUSHROOMS GRATED
    1 SMALL POTATO GRATED
    1 1/4 TBSP GRANA PADANO CHEESE
    3 TBSP OLIVE OIL
    1 TSP SPRING ONION
    1/2 TSP GARLIC POWDER
    1/4 TSP SALT
    1/4 TSP BLACK PEPPER
    INGREDIENTS FOR THE PEPPERS
    2 MEDIUM BELL PEPPER
    1/4 OF A MEDIUM ONION
    SALT
    1/2 TSP SPRING ONION
    1/4 TSP BLACK PEPPER
    1/4 TSP GARLIC POWDER
    2 TBSP OLIVE OIL
    -GRATE THE POTATO AND MUSHROOMS SEPARATELY, IN A BIG PAN HEAT 3 TBSP OLIVE OIL ON MEDIUM, ADD THE GRATED POTATO FRY FOR 1 MINUTE, ADD THE GRATED MUSHROOMS FRY FOR 30 SECONDS, ADD THE 1 TSP SPRING ONION, 1/2 TSP GARLIC POWDER, 1/4 TSP SALT, 1/4 TSP BLACK PEPPER, COOK FOR 30 SECONDS,REMOVE FROM THE STOVE.
    -IN A BOWL PUT 5 EGGS, CHEESE AND 1/4 TSP SALT BEAT TOGETHER AND THEN ADD THE MUSHROOM MIXTURE MIX WELL, POUR THE MIXTURE IN THE PREVIOUSLY USED PAN, COVER WITH A LID COOK THE FRITTATA ON LOW FOR 10 MINUTES.
    -IN THE MEANTIME REMOVE THE SEEDS AND WHITE PARTS FROM THE PEPPER, CUT INTO JULIENNE AND CUT THE ONION INTO JULIENNE, IN A PAN ADD 2 TBSP OF OLIVE OIL HEAT ON MEDIUM, ADD THE ONION, FRY FOR 1 MINUTE, ADD THE PEPPERS, SALT, 1/2 TSO SPRING ONION,1/4 TSP BLACK PEPPER, 1/4 TSP GARLIC POWDER, MIX WELL COVER AND COOK FOR 10 MINUTES
    -BY NOW THE FRITTATA IS READY, A FEW MINUTES AFTER THAT THE PEPPERS WILL BE READY
    -SERVE AND ENJOY
