Hi Theresa! Yep, only as much as you want and by the way, if you don’t want it as strong, chop it with a knife instead of using a garlic press! Cheers, Caroline
Delicious, I could watch your videos all day your recipes look so delicious, I love Mediterranean cuisine and your recipes are so amazing, thank you so much, everyone should subscribe to your channel. Tasty, healthy, delicious recipes, thank you so much Caroline
Gosh, HIllie so sorry it took a while to respond to your message. I’ve been on vacation, getting back out into the world after such a long hibernation. And thanks so much for your suppotive comment. It really is wonderful to recognize that my videos make a difference in people’s lives. It’s my motivation so I’m really glad you enjoy them! Cheers, Caroline
I am so grateful for you and to you I've just changed my lifestyle habits and all three of these are great so I don't get bored with eating the same old thing God bless you
Hi Jojo! Thanks, thanks for your kind words. I’m so glad to hear that my videos are helping you learn this healthy way to eat every day. Cheers, Caroline
Hey Kimberly, nice to hear from you again. The turmeric dressing is definitely a surprisingly good way to add this incredibly powerful plant to your diet. It took a while for me to become a fan of the flavor, but I found I like the combination in this dressing best. Cheers, Caroline
Hi Maya!! SO nice to hear form you again and glad I could help. I’m in the same space, starting to move away from soups and stews and heading towards salads and some outdoor cooking! Cheers, Caroline
Hi Ivonne and thanks so much for your comment. I really appreciate hearing from people and knowing that you enjoy the recipes. Hope you have a great weekend! Cheers, Caroline
I tried the Turmeric Honey Dressing. It was absolutely delicious!! I really enjoyed eating my salad with a dressing that has healing properties such as turmeric, black pepper and ginger. Thanks for sharing!!
Oh Lena, thanks so much for letting me know. I like it too although I realize that it's not nearly as popular as other dressings, it sure it healthier! Cheers, Caroline
Hey Laura, it must have been a mind-meld between us! I hope to add a few more dressings to the channel soon. Generally, they are just so easy and so much better than store-bought bottles, dressings are one of the first ways to get going on healthier options! Cheers, Caroline
HI Lori and welcome to my channel! Thanks so much for chiming in. You’re not the first person to ask about this and it’s something I’ve though about for many years so maybe someday I’ll tackle it, but for now, it’s pretty much all I can do to keep up with making videos for the channel since I am a one-woman band. What’s that phrase…maybe when I’m eighty? ha ha ha! But seriously, I’m so appreciative that you took the time out of your day to send me a note. Thanks much and stayed tuned for more fun in the Mediterranean ktichen! Cheers, Caroline
Hi Jennifer! Thanks for your comment. Salads seem to strike a note as we move away from winter soups and stews and into spring veggies! Glad you enjoyed the video! Cheers, Caroline
My mouth water as i watch this. But i got a question. Some said dairy will bind up with antioxidants in food making the goodness quite useless. However, since the Greek kinda add yogurt, cheeses in their dressing and they stay healthy too, what's your take on the theory?
Sorry it took a few days to respond. Great question, so thanks for asking. As I always say, I follow the science and I can't find any reason yet that including dairy in your diet is not a good idea. Everything in moderation, and especially healthy fermented dairy products like Greek yogurt that provide important probiotics for a healthy gut are key to overall health. So that's my take and until someone definitively proves otherwise, I'm sticking with it! Cheers, Caroline
Well and a good vinaigrette (extra virgin olive oil, any acid--vinegar, lemon or lime juice, balsamic), and mustard (dijon or spicy) might add any of these or none of them (shallots, honey, ginger, red pepper, lemon or lime zest, etc.) Most of my salads, but once in awhile change it up. I use a shake jar normally.
@@mediterraneanminutes Thanks. I haven't anywhere near the experience you have. But going on 4 years I do have a few go-tos--and salads, 1-2 extras or 10 extras are a big one for me.
Hi Leslie - I use it with all sorts of salads fixings and generally go with whatever I have in the fridge but particularly love it with hardier winter things like roasted squash and carrots. A drizzle over sweet potato is nice too…my favorite thing to do though is to just experiment in the ktichen to find the sweet spot that works for my tastebuds! Cheers, Caroline
Hola everybody! Hope you’re enjoying these super healthy dressings as you add more and more salad to your every day diet! So I’m wondering, what other dressings do you think I should make next? XO Caroline
Hello from Bangalore, India. Thank you for the three lovely recipes. However, with respects, I wish to point out that dressing 1 and 3 are not Mediterranean. Caesar dressing is Central American, and Tahini - turmeric is from Middle East. Irrespective of their origin I would use the Green Goddess and Honey turmeric as they look light. Caesar dressing as shown here is still heavy, what with mayo and Parmesan...I would let the children eat that as they don’t have to watch their weight.😀 I would suggest a much lighter version of white dressing based on Greek yogurt with lemon juice, mustard, garlic, dill and honey, salt and pepper, garlic with or without avocado. Hope you don’t mind.
Hi Oreo Girl! And thanks very much for joining in the conversation. My recipes are meant to follow the principles of eating the Mediterranean diet, not necessarily originating in the Mediterranean but trying to show people that they can follow this healthy “diet” no matter where they live. Your points are all good ones and I like your suggestion about yogurt and lemon juice, both are favorites of mine too. Regarding mayonnaise, I should have been more specific that I make my own with extra virgin olive oil and egg yolkl so I know it is healthy. And it’s funny that the question about the origin of Caesar dressing has come up before… it was invented by an Italian chef who immigrated to Mexico so it’s truly a global recipe! Cheers, Caroline
Hi Little Twirl! I think I should own the company that makes this little processor… so many people ask me about it and unfortunately, I can’t find this particular version anywhere on the net. I bought it at a grocery store in Spain. But I do have a link to one that is similar that might work for you but it is only 400 watt not 500 watt so it may be a little less powerful but probably good enough to be the job and it is a glass not plastic bowl, which I really like. Mini Food Processor Glass Bowl: geni.us/V4GqZ2M (Amazon)
Hi again, by now, you’ve probably seen my other response to you on another video. Cuisinart is always a good option or a powerful hand blender with attachments might work as alternatives as well. Cheers, Caroline
HI i Hi David - Thanks so much for asking but trying to publish a cookbook at this point is a bridge too far! I hope you can enjoy the recipes as they are presented but if you ever have questions, please don’t hesitate to let me know. Cheers, Caroline
Hi Willem - Of course, you’re right, its invention has been attributed to Caesar Cardini, an Italian chef practicing in Tijuana, Mexico but my goal with this channel is to show how to enjoy any dressing in a way that fits with the healthy eating patterns of the Mediterranean diet so I hope you’ll allow a little leeway for interpretation! Cheers, Caroline
Thanks, Rain, for contributing to my channel with your comment. I get it, garlic isn’t for everyone but depending on how you cook with it you can minimize the negatives and accentuate the positives if you still like the flavor… like the roasted garlic paste video I created.
Ha! I tried this for a couple of reasons… one, my nails weren’t polished and two, I thought people might think it looked more hygenic! If you’ve watched any of the more recent videos, you’ll see I ditched the gloves (except when preparing chicken etc)!

I wish people wouldn't add garlic to everything. If you're working or socialising the following day (which most of us are) it just isn't appropriate.
