I'd fry the shell and just eat it as a chip and dip.
Your way is like a taco but lighter shell.

I never made it with taco seasoning nor cream cheese. Just ground beef, rotel, velveeta and different cheeses, milk, butter and seasoning. Simple and delicious.

Yes I agree! I normally don’t use cream cheese, but it helps with the consistency inside the egg roll!
