Oh wow! where are you based? I'm jealous, Its conjuring up images of my time spent in Goa in 2009, monsoon rains thrashing against the coast, only a couple of restaurants open, beer, walks on the beach with the local dogs as friends and world cup football in the evenings on the TV :) good times.

Moksha is the ultimate Goal of life in Indian Culture. It's getting out of cycles of life (births and deaths) and uniting with ultimate truth i.e Brahman. Or Infinity. Or beyond physical world. Buddhism originated from India and much easier concept of Nirvana came into existence. But actually aim of Nirvana is Moksha. Moksha is very trippy concept.
Somehow only just seen this comment! Indeed indeed sir! Thanks for sharing. A lot of birth Hinduism and Buddhism contains what could be perceived as trippy stuff. The tibetan book of the living and dying has some of the closest representations of the DMT space in a religious text I've personally read speaking of trippy. 🙏

I am actually amazed at the level of authenticity in this Indian food. Majority of Indian restaurants abroad do not invest in creating the genuine product but rather take shortcuts and cater towards the locals. Very impressive but then again he moved to india and worked at moti mahal which is one of the OG spots to learn Indian Cuisine.

@@globalfoodquest4160 That's awesome. The Jadoh dish is best cooked with pork. Take small 1inch cubes of pork pieces and fry it in its own fat and then cook it like the recipe. You can add some small chunks of offals like liver and kidney to enhance the texture. But don't overcook as it may harden up.

Glad you asked actually Divyansh, has a super interesting conversation with him about it. It was a few weeks ago so really we need chef Zed to be commenting on this, but as I remember through his experimentation he has worked out that it actually takes 2 weeks for the flavour of a marinade to really permeate and flavour the muscle of the meat he's marinading. Zed's chicken also undergoes a partial ferment during this process. Keen to test some.marinades out at different time frames myself see what I find to be the case 👌

Its actually gagbaj ambat that was a auto correct As the name implies Gagbaj means a random mixture and ambat is usually used to refer to a sour dish. I hate thums up sometimes that’s all that they sell in a liquor shop and when you mix it with whiskey it gets this subtle weird flavour just drink coke or Pepsi
Interesting to know! I've never had it with whiskey! So the flavour is the use of an Indian spice I had never heard of..I forget the name now..it's subtle, and in the background, but I wonder if the whiskey reacts badly with that or Summat? I'll give it a try!
