Parsi Mawa Cake recipe | Mawa Cup Cakes

  • This is a very simple and no fail Parsi Mawa Cake recipe.
    I have made Mava Cup cake as well as Mawa cake, depends on what you want to make for your guests.
    Both have the same process, only the baking time will differ.
    Ingredients
    1 and 1/4 cup All purpose flour ( Maida)
    1/2 teaspoon Baking soda
    1/2 teaspoon Baking powder
    1 teaspoon cardamon powder
    1/4 teaspoon salt
    100 gms Unsalted Butter
    1 cup powdered Sugar or Caster Sugar
    2 large eggs
    1 teaspoon Vanilla
    1/2 cup Milk
    150 gms Mawa
    Method
    In a bowl sieve together 1 and 1/4 cup All purpose flour ( Maida),
    1/2 teaspoon Baking soda, 1/2 teaspoon Baking powder,
    1 teaspoon cardamon powder, 1/4 teaspoon salt and keep aside
    In another large bowl add 100 gms softened, room temperature butter and 1 cup powdered sugar or caster sugar
    Tip - to make 1 cup powered sugar, take 3/4 cup regular sugar and grind to powder in a mixer ginder
    Mix the butter and sugar with a hand mixer until well combined and soft. Around 2 minutes
    Add 2 large eggs and mix for 30 seconds
    Add 1/2 cup milk, 1 teaspoon vanilla and mix for another 30 seconds
    Add the dry ingredients to this and mix everything until well combined. Around 1 to 2 minutes
    Finally add 150 gms grated Mawa to this and mix for 1 minute
    The texture with be thick and grainy. This is because of the addition of Mawa
    Now you have 2 ways to bake this
    Option 1 - Mawa Cup cakes
    Take a muffin tray or cupcake tray and put muffin liners
    Now take a large ice cream scoop and put 1 large scoop of the cake batter in each muffin liner
    Give the tray a tap, for the batter to sit well
    Decorate with 1 cashew nut piece on top on each cupcake
    Give the tray another gentle tap
    Bake @ 180 degrees Celsius for 20 minutes
    The top of the Mawa Cup cakes should be golden brown
    Remove and set aside to cool
    Option 2 - Mawa cake
    Take a Loaf pan and grease with butter
    Empty the entire cake batter in this loaf pan
    Flatten with a spatulla
    Give the pan a tap, for the batter to sit well
    Decorate with cashew nuts on top
    Give the Loaf pan another gentle tap
    Bake @ 180 degrees Celsius for 40 minutes
    The top of the Mawa cake should be golden brown
    You can also do the knife test after 40 minutes
    Poke a knife in the centre of the cake - If it comes out dry the cake is done
    Remove and set aside to cool

    Thanks looks easy. I remember the mawa cakes from my childhood from B. Merwans in Grant Road. They used to be a lot greasier and with a hint of nutmeg. These are good. But those were outstanding. I think that Bawa died with the recipe inside his heart..... Some tastes are just best in our memories.

    Roshu what is in the mawa? Is it home made or bought from the store? The cakes look so delicious. You make every recipe so simple and it gets us motivated to try them out.
    So now this is my next big challenge.

      Hi Coomie aunty - Mawa is evaporated dried milk which we use in most sweet dishes like gajar halwa, mawa khaja, mawa cake etc
      I have used store bought because we get very good quality mawa here in Dubai
      You can make this at home too
      Mix 2 cups milk powder with 1 cup heavy cream in a bowl and microwave for 3 minutes - stopping the microwave and stirring every minute

      Hi Shweta add 1/2 cup Yogurt (whisked)
      And increase the baking powder to 1 tsp - if you want to make this cake without eggs 😊

    My cakes don't become brown on top...I use otg not microwave but they almost always remain pale on top.Should I try keeping the inner fan on for heat distribution or increase the time? Please do reply...waiting to try these soon

      You can try calling any Indian sweet shop in San Francisco and ask them if they sell it - making a short cut mawa at home is also there but it does not turn out that good - recipe to quick home made mawa - 2 cups milk powder - I cup heavy cream - mix everything and microwave for 3 minutes - stirring every minute until it gets thick 😊
