- Once October hits so do my cravings for Pumpkin goodies. The Fall baking has commenced! Here are 3 of our favorite pumpkin recipes.
Grandma Erfa's Caramel Frosted Pumpkin Cookies
Cookies:
1 Cup Butter
1 Cup Raw Organic Sugar
1 Cup Pumpkin Puree
1 Egg
2 Cups Organic Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
Cream the butter, sugar and pumpkin. Add egg and mix well. Add mixed dry ingredients. Combine. Drop cookie dough from spoon onto greased cookie sheet and bake at 325 for 10-12 minutes
Caramel Frosting:
3 Tbsp Butter
4 tsp milk
1/2 Cup Brown Sugar
1 Cup Powdered Sugar
3/4 tsp Vanilla
Cook butter, milk and brown sugar until bubbly and dissolved. Cool mixture and add powdered sugar and vanilla. Mix well.
Makes 3-5 dozen depending on size of cookies.
Pumpkin Bagels:

Pumpkin Crisp:
15 oz Pumpkin Puree
1 Cup Raw Sugar
3 Eggs
1/2 tsp salt
1 tsp Vanilla
1 tsp Cinnamon
2/3 Cup Heavy Cream
Mix ingredients and pour into prepared baking dish.
Crisp Topping
2 Cups Flour( I used Einkorn)
1 Cup Raw Organic Sugar
1 tsp Cinnamon
1/2 tsp Salt
10 Tbsp melted Butter
Mix until crumble and sprinkle on top of pie filling
Bake at 375 for 40 minutes or until golden brown.

I’m trying to preserve and use up the rest of our massive harvest of pumpkins and squash… I definitely see those delicious-looking pumpkin bagels in our near future!!😍😋🥰

I actually have an almost identical recipe for the pumpkin cookies, but mine uses raisins as well. Also passed down from my grandmother. 🤗 Thanks for giving me the urge to make some again.

Looks delicious! Haven’t been a huge pumpkin fan other than pumpkin pie at Thanksgiving but I’ve been trying to broaden my taste buds too. The bagels looked amazing and I’ll have to give that a try.

What a clever idea with the pumpkin pie crisp! I’ve always loved the crisp topping better that pie crust but never thought to do this with pumpkin pie filling! Can’t wait to try this! Thanks for sharing.
